I hear the term 'tanking ship'/'tanking' all the time in this game but I'm not sure what it means. I suspect it has to do with a certain way to outfit a ship to make it good at a certain kind of fighting. Please enlighten me :)

Tanking means being able to survive attacks, that's all.
there are 2 kind of tanking: 1. Shield Tanking: meaning your shields recharge faster than the damage they take 2. Armor Tanking: meaning you're repairing your armor faster than the damage you take.

Examples. With a ship that has more meduim slots than low slots, you would put in loads of sheild extenders and boosters, this is called a sheild tank (i do this, my ferox has default of 2500 sheild, when i tank i get 13000 sheilds).
With a ship that has more lows slots than medium slots, you would put on loads of armour upgrades and repairers, this is an armour tank.
You do each of these to make your defence work better than your enimies DPS.

It's a common term in most mmorpg's to describe the ability to take damage and survive.
Fitting a ship full of shield boosters or armour repairers and hardeners insterad of damage mods or ewar would be a tanked ship.

The opposite of "tank" is "gank", a ship fitted for all-out-damage, but neglecting defenses. Gank means "kill em before they have a chance to shoot back" --- All my statements are my personal opinion. I am not speaking on behalf of any entity, corp or alliance in this forums. |

The term "tanking" referring to the ability to survive damage goes back a long time - I remember seeing it at least 8-10 years ago in MUDs. (I had a cleric character who could tank as well as most warriors in the MUD I played)
In EVE there are three levels of protection against damage to your ship - shields, armour and structure. Structure tanking isn't viable for extended fights because structure repairers have too long an activation cycle and are not very efficient in their capacitor usage, and there are no hardeners available to make your structure more resistant to damage. But structure can make the difference between surviving and losing your ship in a close fight - that's why you'll sometimes see the phrase "structure tanking 4tw!" (4tw = for the win).
Shield tanking is used primarily on Caldari and also on Minmatar ships, because these ships tend to have more shields than armour and more mid slots than lows. There are two types of shield tanking, active tanking setups being a lot more common than passive. Active shield tanking relies on shield boosters which restore your shield hitpoints. These have fast cycles and give you back shields at the start of each cycle, but they are very cap intensive. Active shield tanking allows you sustain the most intense damage for a short period but is not so efficient in a long fight. Passive shield tanking relies on increasing your natural shield recharge and as such is not dependent on capacitor. Shield tanking is most suitable for taking on opponents who do kinetic and explosive damage.
Armour tanking is used primarily on Amarr and Gallente ships, but can also be useful on some Minmatar setups. It is more capacitor efficient than active shield tanking but the cycle time is longer and the armour hitpoints are only restored at the end of the repair cycle. With armour tanking you can sustain damage for a long period. It is best suited to engagements against enemies who do electromagnetic (EM) and thermic damage.
