I'm pretty new to the game (3 or 4 days) and I'm thinking of switching from my probe to a rifter, since I'm enjoying combat more than mining. Does anyone have a decent rifter setup they can share for hunting NPC pirates?

Here's my setup. Works very well. I've done level 2s in it with no issue and I have fairly low combat skills (although my defense/tanking skills are pretty decent for a 1.2m SP character).
High: 3x 200mm Gallium ACs 1x Limos Rocket Launcher
Mid: 1x AB 1x Webber 1x Cap Recharger
Low: 1x Armor Repairer 1x 200mm Plate 1x Gyro

if u havent alrdy heard, check out the sticky on ship setups at top of topic selection, has almost every ship there.

This is a pretty good standard setup, and should be pretty easy to fit. If you can't fit it with low skills, downgrade the autocannons to 150mms. They still do pretty well.
And the ship setup sticky is woefully out of date. The Rifter has gained 1 midslot, 1 lowslot, some powergrid, and has had its bonuses and speed changed since the last thread in that sticky was updated. _______________ Spiritu Sanctum |

Aye, but the post RMR Rifter is a different beast from before and so there is little point in consulting the sticky thread. This applies to most t1 ships too.

low; 1x mapc 1x gyro 1x pdu
Baicly have alot of shield that i dont have the cap to replace all at once - just go fast and orbit close - repair between flights or run away - youll be fairly quick - and repair while you run. Skils help

Was thinking about trying someting along this way with RMR changes too, after testing a similar setup on my jag (2x PDUII 1x gyro). Sure, rifter doesn't have jag's resists, but that rifter should do really good. Wonder if you can fit it without the MAPC with good skills, should look into it (but as most NPC rifter pilots won't have that good fitting skills, MAPC will be required for most).
I think with a few warp in/out (due to the lack of resists) you could do tech secrets level 2 with that rifter, and silent the informant, which used to be quite tough with a low skilled rifter, should be a breeze (well if you don't aggro all the second stage at once, which I do for fun in my jag ).
My advice would be to boost from time to time as long as your shield is quite high, but slowly enough to keep nearly all your cap, and then be able to keep the booster on for a long time while you reech the 30% shield, in order to stay at max shield recharge for the longest time possible. Once your cap is over and/or your shield drop under 25%, warp out 'cause then the shield will drop much faster .
PS: imho this setup will be more efficient than the small rep + 200 plate one.

or for Pvp my lows

Thanks for the replys everyone. Looks like everyone is leaning towards ACs for main weapons. Should I avoid long-distance turrets (lasers/hybrids) in favor of shorter range units? I have a medium beam laser on my probe and really like it

For rifter, and projectiles in general, ACs are favored for most thing except gank sniping and fleet ops, mainly because they are much easier to fit, and give much better DPS. The fitting and DPS difference is smaller with hybrids and lasers, and hence for those it's more a choice of range.
For example, on a jaguar which has a bit more PG, you'd need 2 MAPC to fit artys and med extender, while you need none to fit the same with ACs.
