There's also, more specifically, shield-tanking & armour-tanking.
Combined with modules, player Skills and the bonuses that the flown ship may have, one can focus on where to absorb the most damage.
I usually shield-tank, using a ship that has an innate shield-boost bonus, modules that improve capacitor recharge rate, resistance modules that reduce damage dealt to shields, Skills that improve shield & capacitor recharge rate, and shield boosters to replenish the shield. I also have Skills that boost overall shield power, when in a gang.
With all that, it makes sense to shield-tank. I know I'm in trouble if the enemy "breaks my tank"... meaning the damage being done makes it through to my armour.
Others prefer to armour-tank and will have appropriate Skills, modules and setups to take advantage of high armour values.

Best ship to armor tank is the Apocalypse (Battle Ship) Best to Sheild Tank is the Raven (also a battleship) i use the raven and sheild tank but if your looking to tank with gallante wait till you atleast have a thorax to try it out or check here http://oldforums.eveonline.com/?a=topic&threadID=138274 for ways to set up your ship

to expand on the definition of "tank", it probably started when someone said something like "dude, you can take more damage than a tank!"
Basically, a tank has good armor in real life.... so any ship/setup (or a character in a different game) that can be shot/hit with a large amount of damage and still live through it could be considered a tank.
If you have a glass jaw, you are NOT a good tank.
Now.... How do you become a tank in Eve? Like the above posters put, you first have to figure out if you will be an armor tank or a shield tank.
Then, find the appropriate shield/armor hardeners. For instance, If you are fighting Gurista pirates they do kinetic and thermal damage. So find a thermal and kinetic hardener. This will help you take less damage per shot.
Next, experiment with shield boosters and booster amplifiers for an "active tank" role or try shield extenders and shield regenerators for a "passive tank" role (assuming you are a shield tank). If you are an armor tank, you'll want an Armor repair module for sure.... and maybe some extra armor plates.
