Recently I decided to get into a Helios and see if I could track and trace SS's in Space.
Boy, was I in for a surprise! This is NOT as easy as it looks, and asking people to help, is like asking them for $10,000,000.00
I have read just about anything and everything there is to read about this, but I now have to admitt defeat. I'm not mathamatically minded and this seems to be my issue. (never was good at maths in school)
I would really like to know if there is someone out there willing to impart there knowledge to this poor soul?
If there is anyone willing to help (and you don't need to give away secrets here) please contact me. I would really like to see how it is done and possibly learn from you.

This is a bit tricky - but i did manage it a few times. The big problem here is that at the moment the scan window is bugged and if you resize it you cant use it anymore The probe list vanishes behind the system overview map. Hoping for a fix soon, but assuming the window is not broke they work something like this :-
Firstly you need to have some idea of what you are looking for as the scan probes only search for 1 particlar ship type at a time.
Then fit a probe launcher on your ship and equip with 3 of the biggest range probes (96Au i think - its been a while) drop 3 in a system somewhere ( thay can all be together but it works better if they are spread out at eg. planets) then open the scan window, select the 3 probes and then analyse.
This should give a rough location of the target. Go to it - load one of the next best probes (48 Au i think) then select this probe and the 2 closest of your first 3 probes and analyse again.
This refines the target again. Now the idea is to keep going like this, refining the target location further until you are using the smallest most accurate probes (3Au i think) which will eventually give you the target to within a few hundred Km.
Its not easy and it is flawed. As mentioned the scan window is bugged - so dont resize it. (i cant use probes till this is fixed) also the systems you are scanning are in 3 dimensions, like a ball, but the probes scan in a flat disc, as does the normal system scanner. so you might need to move up and down in space as well as side to side to find your target.
In general i found it just to hard work and too long winded, so it was not something i did very often. Maybe you will have more luck with it than me though and i hope this brief explanation is enough to get you started

and dont forget that you only scan 1 au up and down. its not a sphere but a cylinder.
which is kinda goofy. ok i take it back. its way goofy..

While this technically does work, you're simply wasting your time. Imagine yourself drawing a flat triangle out of the 3 probes in 3D space. That triangle is your scanning area, it is a thickness of a total of 2au (1au up, 1au down) and it will scan outside of the triangle edges for a further 1au. Dropping 3 long distance probes all in the same spot effectively creates a triangle of a few hundred meters across, and then it will scan outside of that triangle for 1au. Therefore, provided there is a target within that 1au, you will get a deviation of something up to 48au if you use the 192au probes, and if the target lies outside of that range you get nothing. Better off just dropping the 3 3au probes all in one spot and landing right on top of your target in one go if you've decided to go for that method.
Safespot busting takes lots of practice and patience. Read all the guides you can and experiment with it and you'll eventually develop the "feeling" that sometimes goes with using probes.

do it the way I did. Visit nubsystem and offer them 1m per hour they safespot (teach em how to safespot). Get lotsa alcohol, clear up your schedule for the evening.
Get to it. Learn by trial and error. All the guides in the world can't make up for experience when it comes to probing.
And if you're expecting to "sometimes" fly a covops, get out of it. It's an all or nothing thing.
