I know its situation dependant, but i was wondering what ships people favour above the rest and why, in a PvP situation?
What ship has brought you the most pvp kills or satisfaction?

Solo hunting in 0.0 - Vagabond Fleet combat - Tempest Roaming low sec while sentry tanking in a group - Raven Low sec camping - Raven Low sec solo hunting - Tempest/Vaga Tackling - Stiletto
But i'm a minmater pilot. For fleet combat, mega's, geddons, tempests and scorps all seem great. Eagles are great fleet support. All of the battlecruisers are also good for small gank squads in either 0.0 or empire.
I'm sure you'd get more answers though if you were more specific with your question.

Group/Fleet Combat - I prefer the Raven with a Shield Tank and Tech II Torps, no surprise there! 
Solo - Harpy or Ferox, thats for NPC or player hunting.
Scouting - It's got to be my Manticore or my Buzzrd. Both are great fun.

Any of the previously mentioned ships would die to it 1v1.
Pilgrim is also awesome for sneaking up and raping. Again, most ships cant take it 1v1.

Whatever ship fits your skills and playstyle. Trying to fly anything else is hopeless and more importantly...NOT FUN! I guess it comes down to really understanding which each of your skills do and where that leads you in terms of weapons proficiencies.

For some reason I seem to be most comfortable in a Pod.. but other than that I love Jags and Wolves, and for something relatively cheap and expendable, a Rupture, and Rifters kick ass too.. (yes, 7 mill is a lot for me and I've been playing almost a year -.- )

You can have a good time in eve and be considered damn good at pvp without spending hundreds of millions of isks. It's one of the best qualities of the game imo.

I love my zealot. It is alot better than that stupid sacrilege . My brother flys a geddon, and that thing rules.
I will soon be flying an absolution and I have a feeling that it will become my new favorite ship. Granted the zealot is a speedy little bugger, so it wont be totally replaced, but you cannot beat the bonuses and sheer firepower on the absolution, plus gang mods and groovy looks.

The best pvp ship is the one which will win, unfortunately thats not always something which you can fly, or is fun to fly

A Scorp is the best with a good tank and some good ewar it will take more or less any ship out 1on1.

Of the ones I have used or have any reliable knowledge about:
Long range Fleet BS battles: Tempest gets very highmarks, and usualy ends up high on the target priority list for BS too. Short range Bs battles: Domi IMHO is deadly here, except for the fact that your drones can slow down your escape... expect to be called primary early if not first thing in a close range Bs shootout. Fit Noses (at least 3), 2 guns suiting your taste, and drone control mod, or forgo the guns, and fit 4 nos, medium neut, and drone module, and save the mids and lows for tank/scramble/EW. Don't try fitting a full rack of any gun on here, as a domi sucks with guns period just about. Drones FTW :) Cruiser class for fleet anti frig and cruiser: Thorax with small rails (150MM TII preferably), 1x medium nos and 800MM tank is very useful. 1600MM has it's advantages too, but has agility problems (unless it's a bug then it's just me). TI Cruiser class for solo/small gang: most any highdamage rax setup, or the fleet setup above with 800MM (I shy away from 1600 for this). Or a rupture, not sure about fitting on the rupture though... Most fun, highly effective solo: ANy TII ship, of those I have used: AF: Ishkur is a badass mofo if fit right, only the harpy can really give it issues due to range etc, and 1v1 against any cruiser that doesn't have web+nos+drones is pretty much done for. Inties are hella fun Ranis and crow seem to be the most popular here, and while you won't be likely to take on an AF, or kill most cruisers, your hard to kill in return as you can just run away at the first sign of real trouble. HAC's I wouldn't reccomend for price reasons, not unless your uncle money bags, but for most of us, HAC isn't worth the expense... It doesn't take THAT much to vape a HAC, and THAT much is usualy out there waiting for you to screw up. Most silly: A battle indy can be a fun bait and kill ship if your uber, you can take out inties :) who usualy love going for haulers :) Badgers do well here, I think Itty V does ok too for the TI crowd lineup :) Just make sure your carrying nothing of value heheh and expect to die lots waiting for your inty prey. but when you get your first inty kill (still working on it), you will know you have arrived at the epitome of cool!
Seriously though I have a hard time naming the best ship for each role period because fitting and circumstance play such a huge role once your really there.
Really I would say the easiest situation that you can name a best ship in class for, would be solo and very small groups (not counting low sec sentry tanking gankers, but real hunter killer PVP where your roaming around looking for targets = More fun IMHO). In these I would name Domi and raven for BS (though I would rarely if ever choose a domi or raven for solo anything in the realm of PVP. if solo I'd rather fly just about anything but a BS unless I'm gate ganking then it would be just about any tier II turreted BS, mega and tempest for example), rupture and rax about even for cruiser, Ishkur and harpy about equal in AF, Crow and Taranis about equal in Cepter. I list two simply because these two ships ineach class usualy share the laurels in each class for best for one reason or another. Ishkur for example is highly survivable, while harpy has the better range and speed and can kill an ishkur if the ishkur pilot isn't smart or lucky. Oh and caldari stealth bomber I hear definately gets insanely good marks for the solo surprize gank ship... Whats more you don't have to fight anything you don't want to, unless your already comitted and support shows up.
