Hi,
I want to ask your advice on the what the best ships I would need to progress in. I need a good all around PVE ship to begin with (I just started out) and where should I aim to go from there. Also, is there any sort of equipment you recommend, especially relating to weapons.

I'd say any ship you like that gets you through Level 1's and Level 2's (a Caracal possibly). Get a Drake for Level 3's and starting Level 4's (though it's kind of painful). Then to a standard Raven, possibly into a Caldari Navy Raven or Tengu depending on your tastes. The Caldari Navy Raven is a very capable Level 4 Battleship, and the Tengu is good at Level 4's (not as fast clear times as a CNR) but is also quite versatile for other PVE activities in Wormholes or Low/Null security space.
As far as weapon system, for Caldari PVE, definitely missiles. Not sure I'd spend the time training to Tech 2 Heavy Missile Launchers unless you plan on flying a Tengu. May train up as you go and skip to Tech 2 Cruise Missile Launchers to use with the Raven/CNR... of course, train up defensive and fitting skills along the way. |

caracal -> drake -> tengu Although nowadays it might be more appropriate to suggest caracal -> cerb -> tengu
Honorable mention:
Raven Navy Issue (CNR), Scorpion Navy Issue (SNI), Falcon, Basilisk, the t2 frigs are also good.
the battleships, the NH, the Cerb, there's very little reason to train for or use these ships compared to a tengu. The CNR might have better killing speed and the SNI might rock an awesome tank, but both of these ships have the severe downside of being battleships, and are thus inherently less versatile and useful than a tengu, which pretty much does everything, and does it well.
Of course, I'm a bit biased towards the tengu because I do lots of exploration. The tengu does get edged out slightly by these other ships for pure lvl 4 mission running or nullsec anomaly running. Fighting is Magic |

If missiles, condor/kestrel > corax > caracal > drake > raven
If guns, merlin > cormorant > moa > ferox > n/a (for BS you have to train Gallente)
Seriously, it's better to train guns than missiles. Guns have much wider options later when you train other race ships, and are better at PvE and PvP than missiles. Also quicker and easier to train, and less reliant on skills. And less reliant on support ships. |

RNI is better than Tengu in all level 4s by a long way now, if you want to do low/null exploration the Tengu is pretty good though. |

Crosstrain for Gall or Minmitar. Your options are VERY limited if you choose to go missiles.
If your a stubborn bastard then Caracal, Drake,Raven. |
