Jita, Rens, and Ours are the MAJOR hubs, Amarr isn't quite as big but I'd call it a hub.
Sobaseki and a few others are pretty crowded, but not really considered hubs.

Nonni, Agil, are also pretty busy.
Basically, look at 'pilots in space' and 'pilots currently docked' on the map, then go to those systems and browse the market.

TBH one of the best things to happen in eve recently was the removal of the highway jump systems. Since then i have noticed a large increase in trade local to me in Tash-murkon, and also an increase in amarr.
OK i agree the above mentioned places are the big markets, but if you want a bargain Tash and domain markets should not be overlooked

I can not speak for Ours, Rens etc.
But since the removal, player trade in amarr has risen. Certain market segments could have been controlled by one person due to the lack of competitors before the removal.
now the ruthless competitors try to undercut and ruin me!!

i find derelik to be terribly slow as far as market traffic goes to begin with, even if dysa is the busiest.
