Yes. Put on a nice long skill to train while you are gone and that will train as well while you are away.

and what about cancelling, going to the army for 11 months, then subsribing again. The characters will all be there?

Just to prove the point, i had a friend quit eve and came back 18 months later and his account was still there, the same as the day he left it (he couldn't find a skill that would last that long  )
Ofcourse in that time the area of 0.0 he used to live had changed hands a few times, so he couldn't get all his stuff back.
As i understand it if you leave eve your account is safe for 6 months, then after that time, CCP could delete it. But they have stated a number of times, they have never yet done that and have no plans too.

I actully did someting simular. I canceled my account for more than 1 year 8 months. When i reactivated it I still had all my personal items. (Ships and items) All that I seem to have lost was my corp items (I still had 36 Cruse, Indies and BS and thousands of items in 24 bases). I was the CEO of a little 4 man corp but my buds had stoped playing so I followed. All the corp hangers dissapered into limbo and I was auto placed into a starter corp 1 year 6 months ago.
So make sure to move all of your corp stuff down to your personal hanger, it will be safe there for a while.
