I just started this character yesterday with the purpose of being exclusively an ore thief....
Got myself a Hoarder and fitted it with 3 Basic Cargo Extenders.... I will be fitting it with 3 Extended Cargo Bays 1 very soon.
I can haul about 9000m3 of ore per trip.
I put a 10MN AB on it which makes my top speed just over a whopping 200m/sec.
So far I have stolen alot of Ore, Just thought I would share with all of you a funny story that happened to me today.
I found a miner with massive amounts of ore in his jet can and I moved up to him and promptly stole what I could haul and fled.
The miner said nothing, so I kinda assumed he wasn't paying much attention. I came back a little later and found him still there. At this point the aggression timer was almost up.
I approached his can and he locks me and fires, now here is the funny part, just as he fires the aggression timer runs out! He almost killed me (down to 51% structure) but I warped away.
I WARPED AWAY... just as Concord warped in! 
So I was pretty sure he was dead so i warped back in and found his can. To my surprise his barge was fitted with a tech 2 strip miner worth about 11mil 
I offered to sell him his stuff back but he began telling me how little honor i have so it went on the market.
Oh and I made a few more trips back to empty his jet can while he was stuck in a station unable to leave hehe!

kind of funny you started an alt out for stealing ore and I started one up to web scram and destroy anyone in an indy doing exactly what you're doing. Go power of 2 account you can mine like crazy and blow the stuffing out of thieves all at the same time. :)

Stealing ore is like being a hauler for a mining op. It's not evil it's just freakin dull

Lol I can see what you're saying... If only something like this could happen every day, but alas it was just sort of a freak event.
However, Ore theft is faster than Ore mining... I know cause I have a miner too

Very true, well steal ore to build a nice ratting ship then go kill some miners. Death is the only thing thats good for them...

I have some experience with ore theft. Although I have a strict moral compass on the matter, I only take from macro miners. If I mess up on my assessment and take from an active player, they always message me and I bring the stuff back. I've even formed a couple of hauling contracts that way :)
Anyway, I'll tell you what's really funny. Rig indy up with nanofiber structures (my Bestower goes more than 500m/s witha 10mn AB). Line up on a macro'ers mining barge and RAM the cheating SOB. They glide for miles and miles and you're sat right on their can :)
I first saw this done by an 1800m/s Tempest onto an Iteron V, freaking hilarious.
