From what I remember a probe was a good one to invest in early on, but after that where should I go short of mining barges and indies.

Well either way you'll need an indy to haul.
Destroyers are a nice upgrade from frigates, but are very short on CPU.
For cruisers, Thorax/Vexor are good Gallente miners. Omen/Maller are good Amarr miners. Scythe/Osprey are the cruisers with mining bonuses (Minmatar/Caldari, respectively). With good skills, they outmine any other cruiser-class ship in the game, and nearly equal a Retriever in mining capability. However, they have minimal defenses, especially compared to such beasts as the Vexor, Thorax, and Maller.

best mining ship would be most turrets for the mining lasers, also want to check the cargo space because it can fill up all the way and disengage your lasers.

If you're going to stick to Minmatar ships, the Scythe would be ideal. 20% bonus yield per level of Cruiser skill. 
You can fit 3 Miner II's on it (and it has room for 1 Mining Drone), and you can still have 2 Missle Launchers on it for defense against 'rats.
It can be a tight squeeze getting it to fit (I still use 3 co-processors in the lo-slots), but it's a neat ship. It's also plenty capable of handling most L2 combat missions... not, obviously, with the mining lasers still attached.  _______ Can't find what you need? EVE Search |

I'd go frigate -> industral 1 -> cruiser -> industral 5 -> barge -> exhumer -> freighter.
Then your well on your way to Carebear 5.

Forgot to mention I'm caldari, I think I'll go osprey next. Can someone also explain jet can mining which i assume requires the indy. Although i think i have it, Osprey or something with alot of lasers and just keep dropping into jet cans then get in your indy and pick it all up.

Don't forget that you might need to increase your capacitor to fit multiple mining lasers.

Yep. Fill up a can with the osprey, get in your badger and drag it back to base to refine. Fairly straight forward, but be wary of anyone snooping around - and also don't expect jet cans to last much more than an hour. I wasn't paying attention once and a can popped on me as I was transferring the ore into my indy... i was a sad kitty.

to increase your Capacitor Capacity - Capacitor Batteries, Power Diagnostic Systems to increase your Capacitor Recharge - Cap Rechargers, Capacitor Flux Coils, Power Diagnostic Systems, Capacitor boosters. Not to be confused with Flux Capacitors which allow you to time travel when your ship reaches 88 m/s.

For Gallente:
Vexor < Brutix < Megathron. Both Brutix & Mega have 7 turret slots for mining lasers, but fitting them on a Brutix is a bit tough.
Megathrons make for the best non-Apocalypse (Amarr BS) or non-Mining-Barge miners in the game.
