I'm finally qualified to fly a Retriever.
What's a good fitting for high-sec solo mining? I don't often have a hauler available, or an escort. I plan on using drones for defense.
I was thinking about 2x strip miner I, and then I just don't know. So many desires, and so few slots. But it's going to haul in a lot more than my Osprey ever did.

What security rating will you be mining in? If you can use 5 light drones, .8 and even .7 should be no problem. I don't know exactly how much CPU is left over after 2 strip 1's, but you could try fitting a few passive shield hardners in the mid slots, or a small shield booster. That would leave your lows open for a cargo expander and maybe a mining upgrade too if you can use one. Just make sure you keep your eyes peeled for rats and take them out ASAP. You should be fine if you can do that.
If you are short on CPU, try a small armor rep in a low slot. You can free up cap by stopping your laser's cycle if you need to, or better yet, stagger them, so you can run your armor rep more without shutting them off. (And maybe a cap charger or two in mid-slots).

Photonic Co-Processor, Mining Laser Upgrade
I have 5 drones and I can easily mine solo in .6 systems and .5s if I make sure all the drones go after one guy at a time.

Playing a bit with QuickFit.
2x Strip I
Eutetic Cap Recharger
200mm Tungsten Plate, Small Armor Rep.
Looks like it just might be durable enough for my drones to defeat the four Guristas waves in 0.5...
Though I do like that plan with the Photonic CPU/Upgrade. I'll try that next and see if I can work it. Just not sure how durable it is. ((Like "durable" has any place in a thread about barges...))
