First question. i suggest you just have a look around at what is available. 2nd. Look at the build cost compared to the selling prices to work out the best value/selling Frigates to buy. Be aware, that even if you mine the minerals you must allow for their value. ie. If you can sell the minerals for more than you will make building something, why build it?
3rd. For GTC's check out the sell forum, they regularly appear there.

First off don't invest in a single frigate BPO. That would limit you to a single product line. A diverse product line is the key to a steady income. One week a particular bpo can bring in 30% profit on each item sold, the next week four competitors can appear and you find yourself struggling to sell at any kind of profit at all. In the beginning you need to be able to ride out these spats and holding a little portfolio helps with that.
Remember that there are certain items that no one uses as well - always study the market before buying a print. Look at volume of sales, lowest price on the market and highest price on the market. Look at how much producing the item will cost you and when working out your build costs remember that your mined minerals are worth whatever you could sell them for on the open market.
Remember to look into researching mineral efficiency and training production efficiency.
The easiest way to start your production life is to start dealing with ammo. There is a low profit high turnover market here. Work out what your cost price is then price according to the market. Pay attention to foot fall etc, a station in minmatar space with many lvl1 and 2 kill mission agents might make a good site to sell small projectile ammo for example.
I have some small ammo blue print copies I can give you if you want to try things before investing in your own bpo's. Just drop Prof a line in game.
