Does anyone know if there is a "how to" on cargo containers with stats and how to exactly use them? thanks

Not realy, no...
There are a couple of generic types.
Station/Freighter Containers. There are huge and cant easily (if ever) be hauled around. Mainly for sorting your inventory.
Secure Containers: These act as normal containers when not anchored. When anchored in 0.6 and below with a password only people with the password can open them.
Standard Containers: These just hold things.
Note: Show Info on them to see how much space they take up and how much room is in them. Normaly you can get a 20%ish boost by storing things in containers.

thanks. I just don't get the point of them. I want to learn how and why to use them.

Well, they have a few uses. The secure ones you can anchor near an asteroid and mine into them until they're full, then go pick up the ore in a ship with a big cargo hold. As for standard containers, you can load them up with stuff, and move them to another location in a ship. What happens is you can fit 3900m3 of stuff in a container that's only 3000m3 - so you can haul more at once.

I presume not, but ... can you nest them inside each other?

No, you can't nest them. Also, be advised that when hauling Trade Goods, certain things (mainly foodstuffs) cannot be put in Containers. Keep that in mind when planning your routes and making your purchases.

I am fairly certain this is incorrect. Hacking will allow you to get into locked gates though... |

Hacking is ONLY used for Cosmos missions/objectives. It has no other use and can not be used on player secure cans.
Hacking and the other Cosmos skills are used in Cosmos Missions and Complexes.

Secure cans (and non secure cans at a safespot) are used by some players as weapon/ammo/loot dumps in lowsec or 0.0 to save them from visiting stations (which they cant if they have a global criminal countdown from agression).

If someone opens your jetcan or standard container that is fine. If they take from it, then they get a criminal flag for 15 minutes during which time you and your corp can freely shoot at them even in high sec (but not podkill unless you like to be concordokken). This is different from killrights.

what if you blow one up? does that person get kill rights on you? and if so for how long?
ok, so say if your ship has a cargo hold of 600. and you load up 2 medium secure cargo holds. go out mine and fill them up then go out with your mining barge and pick them up with a 1000 size cargo hold. Isn't just as fast to just go out with the mining b arge in the first place? and bring back 1000 of ore?

If you blow up someone else's can in high-sec space ( >0.5 ), CONCORD comes and blows you up for your troubles.

If you have an Industrial instead of a Mining Barge, it is much faster to mine into a can in another ship and then pick it up, in my case it's 4x faster.
