How often does this happen, I have been in missions with npc warp scramblers, but they never seem to have used the scrambler on me. I don't see any count down timer or message showing any of them is jamming me, so I am just wondering how often they do that. So I don't have to worry so much about fitting warp core stabs on my ship.

Best just to assume that you are scrambled, or will be scrambled. If you can't deal with it you shouldn't really be there.....

Eve creates gamelogs where you can see what happened. They are stored in <drive>:\eve\capture\Gamelogs. If you are scrambled you get a notify message in the log window aswell.

Specific npc have a scrambler chance and they wonŠt do it every time. ItŠs chance based and therefore more or less random. I donŠt think there is a way to determine if they will scramble you or not.
You can only identify the scramblers and kill them as fast as possible, e.g. with a specialized anti-frig setup. I donŠt know how accurate this db http://eveinfo.com/npcships is, but the attributes of the npcs are listed there.

Yeah, I know certain ships scramble and I have seen only once one of those ships trying to scramble my friend. Anyway, I was doing Pirate Slaughter yesterday and out of all the 10 encounters, at least half of them have 4-5 Guristas Kyoukan who are known to be scramblers. I did a word search for "scramble" and I could not find any results.

kyoukans never scramble.
thats a good reason for no logs.
also, never believe eveinfo on scramblers. their idea of who scrambles blows so hard it needs a windtunnel

Interesting, I actually remember there was one time that one of them was trying to scramble my friend in a lvl 3 mission, but that was like once in 60 missions or something like that. Maybe they were meant to scramble but some bug messes them up?
At any rate, can anyone provide a list of known scramblers for each pirate faction? I know Sasha Demon is supposed to scramble.. according to eve info, although they never did in all my lvl 3 missions...

for guristas, the ones you get on missions are all "dire pithi" something. not sure exactly which types scramble, i pop em as they MWD in so they don't hit scram range. all condor types and some merlin types definitely have a chance.
most common scrambler other than that is mercenary wingmen, although they seem to scramble pretty rarely now too. once again, i avoid letting them reach range.
sansha demons are the sansha equivalent of kyoukans, so it would surprise me if they scrambled. i've never been done by one.

Interesting, checking the EVEINFO more closely, there are the following that seems to scramble for gurista: Dire Pithi Infiltrator Dire Pithi Imputor Dire Pithi Invader And some of them have 2 pt scrambling strength? Ouch.

I was just scrambled several times in L4 Pirate Invasion (Sansha) by a loyal servant. Was unexpected and pretty annoying -- never happened before.

All rouge drones called "strain" will scramble (they are far from bulletproof though :) )
