Ive heard of Omber being in "Down the Slavers part 2" are there other missions that have ore in them? Any lvl IVs?

Well Infiltrated Outpost IV has lots of rare minerals in it. So does Rogue Drone Harassment IV. It's not recommended to mine that in a Barge however  .
I'd recommend scanning the rocks in all the new storyline missions. Level 2 ones already have some nice Omber. They seems to be most likely to have "interesting" rocks in them.

Enemies abound lvl 1 has shedloadsa kernite & omber. I mined all the kernite and it came to 0.34mill of ore, never managed to mine all the omber.

Now one those Lvl IV Drone missions are you simply refering to the Refinables dropped by the drones?
DO all agents give all missions? Ive run numerous LvL IVs with a lai dai agent and havent gotten over half the missions on Eveinfo.com

I've done Infiltrated Outposts a few times and always got minerals worth something like 15 millions. Thats drone loot

The only roids i've seen of any intrest is Omber in Enemy abound 1/5
the rest has always been veld or scordite
and enemy abound has aprox 0.5mill omber and kernite

The idea is to do lvl 4 missions in a gang, you clean the area, bring the barges, loot all the minerals, share the money, everyone is happy

HUMAN CATTLE PART V,
HUGE HUGE omber roid, yields 2 jetcans and a bit, I have done the level 2 version twice, and I will continue to use that agent for the LPs I have invested and hoping he gives me this mission ALOT :)

Tech Secrets I has an Omber roid with 50K units. In level 2 missions I could mine without support as the rats never respawned. Just started doing lvl 3 missions and the rats respawn in that one.
I've done another mission that I didn't get at level 2, although I can't remember the name that has two omber roids. But, the area just before I get to them respawns pretty fast (tech secrets I doesn't have gates), so haven't bothered with it cause it would take quite a few trips in an indy to get it all back out. Don't know if the roids have the same 50K units each or not.

those mission asteroids can be pretty nice.

well... except the part that you don't need a gang for most of them...
I've done Infiltrated Outposts I think twice now.. wow. fantastic loot value. opulent compound ftw!
