As above, is it possible for a freighter to jettison cargo for someone else to pick up?

No
Freighters can only go station-station
Although you can setup POS parts and the outpost egg with them as well
But no jetisoning of materials is allowed

Interesting. Can you pick up a floating container in a freighter? Say I wanted to keep a freighter at a safe spot, and just mine roids, and bring the ore back to the SS. Is this doable?

Afraid not. You can open a can but cannot transfer the contents to your hold.

with a freighter the only way you can move your cargo around is while docked. No jettisoning cans, no picking anything up, and no moving items around in your ship.
Think ccp did this specifically to stop ppl from using it as a platform to store ore they mine in a system with no stations. But thats just a guess by me, have fun everyone flying your flying brick.

There are a few structure you can launch from a freighter though
One is a outpost platform The other is a capital ship yard, afaik..

thats the exact reason why freighters can't pick up or make jet cans. the reasoning was that such an exploit could upset EVE's economy by flooding it with lots of cheap minerals or something like that.
Freighters can use the "launch for corp" option for things such as POS parts and outposts (deploying outposts is the intended purpose of a frieghter besides moving lots of crap from point A to point B). i also think a frieghter can launch secure containers but once its launched you need a regular hauler to pick it up. ___________________________________________

can someone confirm the sec containers thing? It'd be a huge pain to have to use them, but it'd be worth it for a freighterful of goods. Seems a bit too good to be true, tbh. I also seem to recall something about freighters not being able to use containers

well, yo can't have the can assembled in the Freighter, so you can't put anything in the can while it's in the Freighter.
