I am a new player (about 1 week), and the probe looked like the best mining ship out of the Minmatar frigates (correct me if I'm wrong here).
What sort of fitting setup should a new player use for initial mining? I'm saving up to fit my Rifter and most of the level 1 missions around my system are all destroy XYZ rat which I can't handle yet in my newbie ship.
I read that mining oriented ships should use probes for Rats. Which type should I be looking at? I'm hoping to mine in 0.5 to 1.0 space (as I need to save ~500K ISK and don't want to risk death, just some cash) depending on what I find as long as the probes

The burst is the better mining ship, assuming you are jet mining (mining the ore then putting it into a jettisoned can, for hauling later on). Just use the best miners you can in highs, cargo expander in low and cap gear in mids.

Use a Burst as stated. Put two of the best miners you can get in HI, then go mining in 1.0-0.9 space for whatever ore sells the best locally (Scordite sells usually really well in Rens, for example) and jetcan mine. Use a Probe cranked out with cargo expanders to haul your ore back to the station and sell it. You'll make money faster that way than mining the Probe full and hauling.
If you end up subscribing, get Minmatar Industrial II first thing and get a Hoarder to haul with. Just to start it will hold 9217 m¦ in the cargo hold.

I actually hadn't thought of jettisoning and hauling with another ship.
How long does a jettisoned can last out in space?

Probe with expanders in the lows and train for scout drones lvl 3 you can get (i think) 3 in the probe drone bay should keep you relatively safe in 0.8 and up. When mining try and do it alongside barges or other miners hopefully they will be nice enough to pop any rats for you.
Its sad you cant use industrials on trial accounts any more because that helped me alot in my first weeks and months whilst training the learning skills.

Also I'm assuming you can't leave a ship in space so you'd have to travel with the burst back to a station and then make the prove active to haul it back?
If that's the case it doesn't seem like it saves much time except for the mining yield bonus.

Bumping this for a follow up question after some background.
I bought a burst and 2x of the Gauss (sp) mining Lasers with nothing else (said it produced more ore than the Mining I laser and was affordable). I did not quite have the skills for T2, but I probably will not be mining for long once I fit and buy the Rifter I am after.
I bought a Probe with 2x Expanded Cargohold 1 which gave me about 530+ m^3 and nothing else.
I jettisoned mined with the Burst for about 20 minutes, and then wanted to test how long it was to haul everything back. It took me almost 50 minutes, so I definately need an Afterburner on my Probe.
My question is on the "Show Info" on the jettison, it says it lasts about an hour. Does that mean it lasts an hour upon creation, or an hour of me not touching it (putting ore in it or out)?
Also, anything else one might suggest to reduce hauling times with my probe (I don't have the skills or cash to do anything else at the moment) for hauling besides an afterburner?

If you want to speed up mining, do what was suggested...use your Probe to mine and put everything in a jet can. Once your trial period ends, you can buy an industrial (which holds at least 10 times the cargo as your probe), which in turn, will allow you to transfer the ore back to the station 10 times faster.
