i just started using 3 miniguns simultaneously, and i find ammo runs out FAST. And that stuff is expensive. And it takes up cargo room. How many rounds do you guys typically carry?

This is what I used to do.
Filled up the cargo hold with ammo, blew up everything in the mission, bookmarked the can, docked and completed the mission. Then I just jumped in a Probe with expanders and ab or mwd warped to the bookmark and scooped up the loot.
I have no idea which rats you're shooting and if it's even a viable option, but you might wanna take a look at Artillery (250/280mm, 650/720mm guns). They eats a lot less ammo, might not be as fun as autocannons, but they do the job.

depends - I usually had 2000 per level 2 missions with my 3x200mm rifter.
while I always loaded my cargo full when chasing rats in my wolf - changed to lasers & amarr after I had to dock and fetch an other cargo after taking down one out of two 1.7 mil BSs in some belt somewhere 
training amarr with my new char just so that I can PVE in comfort, once there I'll swing back to matari for PvP

I have similar issues with my Brutix.
I'm feeding only one less gun than a destroyer, and the ammo I need is 5 times larger than the tin can's, and I have a smaller cargo bay.

1500 per level 2 mission in highsec. Thats with 3x150s and a pretty decent ROF. In low sec, and with the mission changes, I'm carrying 2500. Plus 360 rockets when I have them fitted. I never even come close to running through all that, but it gives me some extra in case of errr...non-non player character trouble. 
I really should carry more than that even, as it's very rare I find something worth picking up for the time involved.
