can anybody tell me why i should train my ore processing to level V, like omber , plagioclase, kernite and the rest. It doesnt make any different for the refining and its only needed for the crystals.

If you want to grab those last few % of minerals when you refine at a station with less than 50% base ...
The 100% are attained with Refining 5, Ref Effi 3 and Processing 2 in the stations with a 50% base (or with 5/5/1), and ONLY in those stations.

Most 0.0 NPC stations have 50% refineries, so ore V is a waste there (some are 30%, but there's usually a 50% close enough) All PCS (player conquerable stations) with refineries are 50% It's player built Minmatar Outposts that are 35%, these are the ones that it's really worth training skills like ore-processing 5.

Also you need to train each of the skills to lvl 3 to be able to use the T1 crystals in the modulated strip miners. To use the T2 crystals you will need to train them to lvl 4.
Other than that, yes the only reason I would spend the time to take them there is because you spend a lot of time in low sec around stations which have the 30% base yield.

Do you need it to 5 to get the 75% rate from an intensive refining array on a POS? It would seem so if the pos base rate is lower than the outpost's rate.

Nope, the POS refinery arrays are an exception, those always refine at their stated base, that is also their refining cap ... so you'll always get 75% of the minerals with an Intensive Refining Array ...

I just got 57% yeild from my first run on an Intensive Refining Array. So while ore specific skills to V may not be needed, the base doesn't seem to be 75%.

Yield listed in refining arrays' description is - as far as I understand it - the cap. One can't obtain more than e.g. 75% for the intensive version. I read that one of the "rare" skills - "remote refinery operation" (or something like it) allows you to get beyond that cap. According to a dev's answer (apologies - can't find the link right now) it's not true and that skill applies only to refining vessels, which are not seeded yet.
