So i'm dipping my toes in the water to try out PI but i've ran into a few concerns.
I'm currently trying to make coolant using 3 different plants.
Ice: Aqueous Liquid -> Water Storm: -> Ionic Solutions -> Electrolytes Gas: Water+Electrolytes -> Coolant
Now my big concern right now is that on my ice and storm planet the current setup extractors do roughly double what my processors can change into the next product. Is this normal that I have so much initial product in storage, or should I remove some of my heads on the extractors and add more basic processors?

From my experience PI is not about getting the maximum off a planet but keeping a production line busy enough with minimal effort. |

Each basic can process 6000 units of P0 per hour. So divide your average hourly P0 by 6000 to get the number of basic factories you need. |

Since the extraction amount is not constant across the duration of the extraction cycle, you get a lot of surplus R0 mats before the extraction rate drops enough for your processors to catch up.
You can drop a few heads and add an additional processor to alleviate the problem; making sure, as Aerie pointed out, that the average hourly rate of extraction exceeds 6000 units * number of processors a bit.
I also like to route my R0 to a storage first, before routing from there to processors. A storage has more space, thus offering better buffer, and with the P1 product being routed to the spaceport, the two dont compete for storage space, reducing the risk of overflow.
Using 2 ECUs is nice as it avoids the problem of having to upgrade the link when using 1 ECU with 10 heads. It also provides more coverage to chase those hotspots.
On a side note: using a Gas planet as your factory planet may be suboptimal, as Gas planets are notoriously large, thus increasing the costs of links unnecessarily. I'd recommend using the planet with the smallest radius for your factory planet.
Another sidenote: you can produce Coolant on a Storm planet directly, no need to ship P1 stuff around. May not be effective with highsec planets and low skills, but it sure cuts down on the hauling. It also works on Gas planets, though not as well.

EDIT: Here's a pic of my current setup on one of my planets. What you need to do is balance your extraction rate, with what you factories can consume.
Each basic factory consumes 3000 units per cycle, they have 30 minute cycles, so consume 6000 units per hour. If you are on the right planet for that resource, a single extraction control unit with 8 heads should max out your production.
For high sec I would say a good target is 24,000 average units per hour extracted with 4 basic factories, if you are pulling much more than that, add another factory before adding another extractor head. 30,000 units per hour will keep 5 factories busy, etc. only put out enough heads to keep your factories running.
There is no point in extraction more P0 materials than your factories can convert to P1. All you will do is fill up your storage with P0, leaving no room for P1 to be stored, which will make your factories shut down.
Also, in case you are not doing it, always route extracted material to storage, then from storage to factories. The reason for this is the extraction curve. The survey indicates your average extraction rate per hour, but that is average over the whole program. if you look at the curve you generally will be pulling much more at the beginning, with the amount going down until the end. the extra pulled at the beginning will sit in storage to top up later cycles when the extraction rate is down. If you route directly from extraction to the factories anything over what the factory can hold will be lost. if you route to storage the extra will accumulate there. |

Would like to just point out that gas planets are the worst kind of planets to use as factory planets - they are generally the biggest and therefore the connections between structures are the most expensive.
Better to put together the water and electrolytes in a smaller planet if you can. |
