How do they work- eg. say I take a mission, and pay the collateral, and then don't deliver- does the person who made the mission get that collateral? I assume so?
Also, is there any way to scam someone out of the collateral?
The reason I ask is that I have found what is potentially a mistake that someone has made, and I was wondering if it's a scam... eg. I would just take the mission and keep the item.
Is the worst that can happen that the item isn't what it says it is in his description and then I just deliver it? Or is there someway he can scam me out of the collateral?

You open it, you own it and lose the colateral, regaurdless of whats in there. So yes, its quite possible to scam that way. OR rather, counterscam- since you are trying to scam him by opening his items.

You say I lose the collateral, but surely I get it back automatically I deliver the item? or can he cancel it midway through?

The best way to avoid a scam when doing player courier mission is this.
1. write the names or the systems you start and end at.
2. go to the map and look to see if those systems are present. If they are not then it is a scam.
3. make sure you can afford to lose the collateral should your ship get nailed in low sec.
4 be wery of extremly low sec routes and destinations as you can get jumped easily. atleast in a 04 system you got the sentry guns to provide defense.
5. train to use the improved cloak as it will help you alot.
5. freighters do not go in to lowsec, unless the customer pays you in advance the cost of insurance (non recoverable fee for the customer) if he needs a ship that big he will pay you. OR your freighter travels under HEAVY escort consisting of people you know and trust. (ie corp m8's or allies)
6. If you spend isk for colateral and if everything works out and you get the freight to its destination ON TIME or ealier the collateral will be given back. that part is all automatic.
7. NO the client can not cancel the run once it has been accepted.
8. transport ships are awsome in low sec.
