I'm going to take a break from EVE for a month or two (as in I'll cancel my sub). I have a 25-day skill I could set but see no real point in doing so if training stops when you cancel your sub. Does this happen? Or if I set the skill, when I come back in a few months will it be trained (or if there's a way to change skills w/o launching the game, I could just keep trianing (would be nice to have a web interface that allowed you to change skills from anywhere in the world with an internet connection)).

Short answer, yes, they keep training
Long technical answer:
When your client logs in, it checks to see what time you started training your last skill, it then figures out how long it would take to finish that skill at your current atributes, finally, it adds the two together, and if they are greater then the current time, tells the server that you have finished your skill.
After the server double checks the math, it then gives you a skilled up message, dated at the time it would have normally finished, and prompts the client to warn you that you are not training a skill.
At no point during this process are the servers that are responcible for when you are allowed and not allowed to login checked, so the game does not know that you cancelled your subscription at some point in the intermedium.
Nor does the game really care, allowing the skill to finish gives you an incentive to come back to the game 
As a final note, the Devs have said they will NEVER EVER create a web interface, as training is part of the game, and should therefore be part of the game interface (Much like how you can not trade on the market via a web browser either)

Yeah, not having a web interface makes sense since I imagine the galaxy would be sparsely populated as many players simply trained up to a certain point instead of logging on to play.

This is not actually accurate now. The devs have recently said that they are looking at different ways to implement it. While nothing is set in stone, they have moved away from NEVER EVER.

Skill Training - Queue or Dual training
Enabling players to either queue so that training takes the next skill level or starts training another skill up another level. Dual training enables you to have a primary long-term skill in training with a secondary short-term skill sharing the training time. After the secondary skill level has trained, the primary skill trains at 100% again.

well i don't really see any harm to be able to switch ur skills using the eve website and as long as ur subscription is paid.
then again it's not really that important and i would rather see the devs work on more usefull things right now. Banner will be updated shortly |

You can't login to "My Character" unless subscription is paid.
If you include some form of "captcha!" (like in the trial links for instance) with all skill training change requests, I see no reason NOT to do it... unless you really really just have to make us login into the client first (why, no idea).
