Each system already has a sun. Stars are not magical space unicorn dust particles that fly past your ship like in Star Trek. They are giant celestial objects that are billions of light years away from each other. 
We also already have those in the form of a skybox!

Eve stars are more realistic tho, generally, stars are just too bright to see anything on the surface, unless you dim the light of the star/sun or do image enhancing

No it does not look like the distance the planet is from the star effects the planets brightness when you are in orbit around it. But from afar the planets do look dimmer when they are either small or a long distance away from the star.

"Sun" refers to only one star, specifically the star that Earth is orbiting. No other.
Asking "where are the other Suns" is like asking "where are the other Jitas".

What you are thinking of is a false-colour image. That is not visible light. This is a visible-light image of the sun: http://www.photographyblogger.net/wp-content/uploads/2012/05/IMG_9881_sun_may_1.jpg
This is achieved through the use of filters, so that a minimum amount of light is actually passing through. It's the same way they take images for the rest of the EM spectrum, albeit with different kinds of filters.
EVE visualises stars correctly in that, they're way too bright to have a surface intelligible to the 'human' eye. |

On topic, the light being the same everywhere in the system is obviously our camera drone inputs artificially levelling the light, since we aren't actually physically seeing in EVE anyway but being fed direct neural inputs while in an egg deep inside the ship. So it makes perfect sense that the 'light levels' remain constant anywhere in the system.
What I would love to see is stuff like solar storms that sweep through systems, more likely to happen on grids closer to the sun. So fights directly 'at' the sun would be disrupted by storms a lot, which could have a whole range of effects from straight damage, to growing or shrinking sig radius's, or increasing/decreasing velocities. While fights in the outer regions of a system would be very unlikely to get disrupted by said storms. Asteroid 'belts' should also have particle storms caused by their gravitational influence.
Basically, space should be alive and not just dreary space. |
