Is it possible to use different weapons on different targets? Say I have 2 guns and two missile launchers, can I train my guns on the close target and missiles on the far target?
Thanks in advance for any replies.

select the 1st target and activate the guns, then select the second target and activate the missiles.

Another example,
You are flying solo and come across 2 battleships and an interceptor.
You know you have a good chance of killing the interceptor so you could warp-in, target all 3, activate jammers against the 2 battleships, put your guns/missiles on the interceptor, kill him and warp out all nicely.

For normal use, always focus your firepower on 1 target till it's dead, then switch to the other. You'll kill targets quicker so they hit you less, making your life a lot easier.

Generally in Eve, splitting your fire between two or more targets is a bad practice to get into. With both PvE and PvP a ship will fight upto it's full portential until the moment it dies. It is much more effective to deal with one ship, destroy it, then move onto another as each ship you destroy will cut the amount of fire your ship is taking

Then again, in a situation where you have different weapons with different ideal ranges, hitting multiple targets in the different ideal range bands can be useful.
