So the other day I got into an Incursus, and am training up electronics, engineering, drone and mechanic skills to be better prepared for when I eventually go for a cruiser. Been doing alot of Level 1 missions for.. that gallente pharmaceutical company and have the rep with them to do Level 2 missions but I know I'll get stomped in them with my little frigate.
So, I'm curious now what to do, I have about 13 mil isk and I'm fairly confused about what to do until my skills train for cruiser, considering on EVEMon I'm about 2 weeks away from a cruiser at least. Any ideas would be welcome.

Some of the L2s are doable in a Frigate with low skills. (All of them are doable with decent skills, though some are tedious.) You might check in the Mission forum to find out which ones are the easiest. In that case I'd recommend finding a station or system with multiple agents you'd like to run--that way you can refuse the hard ones without screwing up your standings. I'm not very familiar with Gallente frigs, but you'll probably want something better than an Incursus for that.
You could also try L2 courier missions, or hunting NPC pirates in belts. There's also the lowest level complexes. Some people even enjoy mining.
Or just jump into LowSec and start shooting people, like Benglada said. 
Maybe the best option would be doing any of the above with a friend.

Get a vexor.
With fairly low skills, a vexor can work effectively in lvl2 missions.
4 x small guns (125mm or 150mm)+ 4 or 5 medium drones will do the biz, without needing lots of SP

How can you tell which are "lvl 1" "lvl 2" missions?

That depends on the Agent. 
A Level 1 Agent gives Level 1 Missions, L2 agent give L2 missions, etc.
You can do a Show Info on your agent (and your agent's corporation) to get a list of all agents in that corporation (both available & unavailable), their divisions, and how much standing you need to be able to use each of them. They are divvied up by their agent level.  _______
