Is all I see in EVE.
I'm on a 14 day trial account and enjoying my first few days in space.
Could someone enlighten me as to what there is to do once I level all my skills/attributes and get an uber ship?
And please refrain from using the word 'farm' in your reply.

let's see.
1) Start your own corporation and find folks that would join you.
2) using said skills make lots of ISK and buy a personal station and carve out some 0.0 for yourself.
3) become a pirate and terrorize all and sundrey with your evil laugh.
4) Join a corp and help fellow players.
5) Join a corp and proceed with a hostile takeover.
6) become a mining mogal and become rich.
7) learn to manufacture and become a production mogul.
Just a few ideas that have popped into my head while playing Eve in my 20 something days.

There is no cap lvl 60 here. Unless you plan traing up for 3.5 years I can't see you training all the skills in no way. Eve provides so much, asking after 14 days "What will I do when I get to the end?" is stupid. I'm sorry if it offends you, but journey is what you should be looking for, not the "end game".

missconception 1, level all my skills..... No such thing there are always going to be more skills, or something you can train. By the time you have learned every skill in the game to lvl 5 CCP will have added more skills and more ships and more content.
missconception 2, Uber ship..... guess what no such thing again, unlike wow having the best gear does not mean you win, haveing the most skills does not mean you win, having unlimited funds does not mean you win (it does help) i have seen a group of 1-10 day old pilots kill a 2 year old pirate in a BS, and i have seen a single 3 year old pilot take down 5 cruisers and frigs.
We cannot tell you what you want to do you need to tell us what your interested in and then we can direct you to ONE of the many possible ways to achive your goals.

Join a corporation. Most corporations have a general theme going. For maximum fun I suggest joining a corporation that is part of an alliance that claims in area in 0.0 space.
Get yourself into a good financial position. I suggest doing missions off the start if you only have one account. Mining is great when you have multiple accounts.
While doing missions you should be training skills you need. As everyone suggests you should probably train your learning skills first. At least train the basic ones to lvl 4. Training the advanced learning skills to lvl 4 is recommended. Ignoring Charisma is an option.
Now continue to do missions until you have the skills and isk to do some PvP.
You have now reached "end-game." As you run low on isk do whatever it is you like doing to make isk so you can continue PvPing. The economic system revolves around PvP, not the other way around.

Eve is unlike any most other games out there, where it does not lead you along, and tell you where to play, and when to leave an area.

fyi, starting with a noob char with +5 implants accross the board, and training the learning skills to max first it would take my character
4648d, 10h, 23m, 8s
to train the current skillset
hmmmm, see you in 13 years 
I'd hate to think how much that would cost...

You decide your own 'endgame' in Eve.
Best thing about that is you get to choose another 'end' once you've achieved that one.

In case it hasn't been made explicitly clear, there are about 20 years' worth of skills in the game. Nobody gets to be totally uber, you decide what you want to be uber at.

I'm not sure what kind of answer would really impress you Fankriss, but I'll try my best for a new player thats far away from the grind/farm mentality.. As I'm sure you gonna join the pvp part of the game (be it market domination, or dominating your opponent on the battle field).
Like others said EVE is a pvp game and the PvE content (NPCing, missioning, complexes) is much weaker compared to WoW, which is not neccesarily a bad thing. As a PvP game, its all about competition between individuals and groups, you can be a solo pirate terrorising innocents, a fleet commander for an alliance, or an industrial mogul capitalizing on a certain production line.
My best advice: take the time you train your learning skills up to discover what YOU want to do in EVE, its a huge universe out there and there are many posibilities. Take what suits your style best and specialize in it.
There is no uber ship, and the balance between modules and ships are being changed on a regular basis, what might look uber today will probably be of same efficiency with other stuff tomorrow. Big ships are better for fleets and camps, while small ones are better for fast strikes and the like. A basic concept of races would be:
Amarr: Tanking Caldari: Tactical versatility Gallente: Damage up close Minmatar: Speed

All I say is different strokes for different folks.... .Here are oe things EvE is for you
If you enjoy PvP .. EvE is for you...
If you enjoy buy/selling .. EvE is for you
If you enjoy manufacturing .. EvE is for you
If you enjoy the care free PvE .. EvE is for you
I have played for about 1 year now and I have tried almost all aspects of EvE. PvP was not that fun..for ME. Now I run my own industrial corp trying to make it profitable, making NAPs etc.. is fun for ME
I suggest you look at what EvE has to offer, see if you have an interest in that area and work towards that.
Sure having a uber ship would be good, but whats uber?? Carrier, titan??? all these take months to train for to fly them very well. ------
