We've all seen the examples of the empires' languages, but we've never seen much of them-
I'm just curious as to how filled-out the languages might be, and how we could make use of them! It would be fun to have some types of dictionaries/grammar rules for their tongues that we could use.
And I'm guessing we could at least figure out which languages they would be derived from- they all came from the same place, after all

It should be noted that what Graelyn linked, as well as most player-constructed conlangs, don't represent the actual, modern language. Amarrad is explicitly stated to not be modern Amarish. Amarrad was written as an older dead language no longer in use. Most others tend to be alternative languages or regional variants (most of the Minmatar ones have been this).
To Uriel: There are no rules. They aren't filled out. Some player creations as stated above are filled out, but they are regional dialects rather than intended to replace the core language.

There was also an impressive effort in the Caldari RP community to develop their language. Two links are included here. Like Graelyn's link these are player creation and so not exactly PF. Like the Amarr bloc the Caldari do integrate some non-English language into their RP pretty consistently especially with certain suffixes they attach to the end of names which I, shamefully, haven't learned yet.
Beyond a smattering of individual words I am relatively certain CCP has never put their stamp on anything in regards to language so, right now, we have to rely mainly on the work of players.

I've made a glossary of Amarrad and Caldarian (that's what I call the Caldari language) on Eve Fiction.
We are Toralen Industries. It doesn't matter if you fight for money, idealogies, or because it's what you are good at and it doesn't matter if you fight threw trade, combat, or diplomacy. No matter what or how you fight, there's a place for you.

I've been thinking of starting a centeral location for all things linguistic in New Eden. Can't think of a decent name, though. Right now, all I've got is "Eve Speak".
