Is it common to create 2 or 3 characters at once and spec one for mining, one for combat, and one for research/trade (so skills are being learned simultaneously)? Then once the combat is complete branch him towards mining, vice versa for the others...
On another note..
Can items and ships be passed from alt to alt, or would this have to be done using a friend to transfer the items.

You can only have one skill training per account at one time.

As said, you can only train one skill at a time for your account, but people do have their alts trained in different fields. (Hauling, mining, fighting, etc.)
On your other note. You can escrow the items to your alt so that they will be the only person to claim the items.

I wonder what the big deal would be in letting us train skills for all 3 character slots simultaneously? It's not like you can play all 3 at once (your client logs out when you're logged in elsewhere).
Since this is something EVERYONE could do, I don't see the harm (except CCP's wallet because people don't have the need 2 or 3 accounts) or imbalance. - Download the Eve Backstory eBook

Couldnt people farm alts then sell them for isk if you were able to train more than one at a time?

It'd also remove warefare in EVE.
The corp/alliance of your main is at war, you don't like that. So you play with your "alt" until it ends.
The alt farming as someone mentioned... It'd remove the newbies because they could just buy one of the hundreds of thousands of floating alts that are better than their newbie character. With such huge supply and little demand they'd probably sell for .5 isk per SP.
