I'm a player who generally doesn't have a steady schedule of time to play, so I would prefer to play EVE solo. Is this possible? It would even be acceptable to be in a corp and such but still fly/hunt/kill/whatever solo.

Sure! Your safest bet would be to stay in a NPC corp and be a "carebear". You can either run missions or mine, and be quite safe and make very decent money.
Later as you start getting more skills and money, you can venture out into low security space and start messing with PVP.

It definitely is possible, and a lot of people do it. Once you've got your skills up a bit it is also possible to make an even better living by moving into lowsec/0.0, and mining/pvping there. Although, EVE is a lot more fun in a corp when you have friends to help you, and if you find a good corp it will be fine playing casually.

It may take a while, but you might find a friendly corp who are willing to do stuff with you when you can be online. In UO i was in a guild that would organize hunts, etc for when some players could get some free time to play...but in EVE, with its "trust noone" attitude it could take a while to find such a corp 
Maybe you could even join a rp corp and have a rp reason why you aren't around much

There are boatloads of corps that don't require you to be on at specific times and whatever--this isn't World of Warcraft! I'd bet a good majority of EVE players have the same issue you do, so you'll be right at home.

Like most MMORPGs Eve is geared towards group play. Since as you point out solo players are often solo because of RL commitments they also have less presence on the Forums.
However, they are out there. Look at the map and you'll see most characters are in hisec, not 0.0. They are not in the big Corps and Alliances fighting massive multiplayer battles. Eve is a big universe and it has room for many styles of play.
There a lot of things to do in Eve. Some of them are high level and only possible for groups, others which are just as fun can be done alone. Ignore those who tell you that group combat is 'better' - it is for them but not for everyone. Without the characters who manufacture and trade and keep them supplied with items with which to blow each other up, they'd be cattle trucked.
As for Corps, again the big PvP ones are the most visible, but I know of smaller ones outside the Alliances that have a mixture of group and solo players. There will be one for you. Try reading Corp descriptions you pick up from station offices and characters, if you find an interesting one Evemail the CEO and describe what you're looking for in a Corp.

As has been mentioned it is more then possible to solo inEve, though I would suggest that you look to one of the better Freelancing Corps to join up with, you'll see them advertising on the recruitment forums. If you find a good Frelancer Corp you can get the best of both worlds, a group that can accomodate a solo playstyle, but which can also offer you a lot of support, though unlike mainstream Corps, you will be expected to pay more as you will be entering into private deals with fellow members. Though saying that any deal you cut should usually be well below what you would pay on the freemarkets

You certainly can play solo. I spend 90% of my online time flying solo, although I have the corp TS on for chatting and yelling for help if I need it. The same applies to a lot of the other players. Most mission run, rat or mine solo the majority of the time, teaming up for missions occassionally if they need help. Corp events do happen - regular mining for those who are available, gang runs into deepish 0.0 to leave clones, position ships and do some small scale PvP, plus anti-pirate sweeps if a few PvPers are on together.
There are probably a number of corps like this one available to a casual player that let you solo but offer some corp support and activies, as well as friendly faces to chat to.

Even if you decide not to join a corp, bear in mind that the gameplay is phenomenally enhanced when you cooperate with other players to acheive a common goal. Whether that goal is mining, trade, production, or PvP it will be made much more fun as a result of your involvement with other players.
With that in mind don't ever hesitate to solicit gang invites from corp chat or local and have a ball flying around in a gang, chatting and killing rats or players or asteroids. You'll pick up the game a lot faster this way, too.

I played solo for my first two months and then joined a small corp that focused around what I wanted to do, (Mine and make money). My game time is 100% more enjoyable now.
When I get on now I can still play solo and do what I want, BUT if I want to do something with others I now have the option. Mining by myself was ok but now that I mine with a corp I am way more productive and make at least twice as much money. I can mine in better belts with better ore, I dont have to haul and there is always protection provided so I can just concentrate on mining.
With a corp there are other benefits like free or discounted ships and ammo, corp hangers and others to listen to your ideas and help you to do the things in-game you want to do.
If your into mining and are in the US, join channel GMINE sometime this weekend. You dont have to join our corp, just stop by and see what it's like in corp chat.

Like others have indicated, you CAN play solo but it's really much more fun to have a corp to do stuff with and learn from. Just look for a corp that is fine with your loose time committment, there's probably a ton of them. :)

Levalt I'm in much the same boat as you. Sporadic play time and can;t always promise for how long. My corp is a 0.0 corp and is very acomodating of this. Drop me a line in game if you are interested.

There are numerous "freelance" corps (such as G-Tek) that offer the support of a corp while still allowing you to do your own thing solo. Check out the recruitment forum for ideas.

Obviously you solo easily in Hi-Sec space (1.0-0.5)
IMHO you can pretty much forget solo PvP or Pirating. Or anything solo outside of 0.5
There are 'wolfpacks' out there whose sole purpose is to 'gang-gank' anyone they see for no reason other than "because they can"
And you only lose security status if you initiate combat, if someone aggresses you, you get your PVP 'fix' and still stay at standing.
Also there are a he11 of a lot of things to do in EVE other than making it Unreal Tournament or Quake..

Sorry Draconia I have to disagree with you there completely. I have always solo NPC ratted in low sec and now in 0.0 and to date only ever lost a single Prophecy to a player gang. Yes, it's harder, more of a challenge, but so long as you are on the ball, take precuations solo ratting in low sec and 0.0 is more then possible

Its possible yeah, but I don't think its desireable.
Most people kill people in NPC corps because they know there arent really chances of repurcussions. Getting yourself in a corp or alliance you can play solo but benefit from standings and whatnot.
Take CIC alliance for example, they are all freelancers and lots of solo players, no real pressures but they benefit from standings and are widely regarded as bob's pets.
Solo is possible, but realistically I believe if you aren't in a corp you'll be called an alt and killed much more likely.

To answer your question, yes it is possible to solo, from day one till whenever you quit.
Joining a corp is good if you want to learn the ins and outs of EVE, but it is not necessary. And solo pirating happens to be quite fun, I would recommend it if you want excitement and a way to make money.
Just dont expect to win all the time, chances are you'll lose a few ships and learn from your mistakes, anyway, to eventually minimize loss and maximize profit.
