I'm wondering what the precise effect standing has on each of these. In other words, at 5/10 standing what % will the faction take.

Faction standings only account for bout 4% of refining loss. The formula for refining efficiency before standings are taken into consideration is as follows:
station% + ( 37.5% x ( 1 + ( 0.02 x refining skill ) ) x ( 1 + ( 0.04 x refinery efficiency skill ) ) x ( 1 + ( 0.05 x OreName processing skill ) ) )
The station% is either 50% or 32.5%, and the 37.5% is your base refininf ability before skills are taken into account. The amount of ore a faction takes is dependent on your standings with that particular faction. Once your standings are higher than 6.67 they no longer take their cut.
I realize that this doesn't explicitly answer your question, but hopefully you can use this information to revere engineer the exact faction standings formula.

Thanks, the 6.67 number is what I was looking for. I'm also wondering what % the faction will take for the broker's fee and sales tax at 10 standing, or at what standing they stop taking a cut.

As far as I know, the exact formula for broker fee hasn't been worked out.
According to an old guide, it's been guessed to be something like:
0.01 - (BrokerRelations*0.0005) - (FactionStanding *0.0005) - (CorpStanding*0.00025)
The lowest possible broker fee has been quoted as 0.1875%, assuming Broker Relations to 5, and perfect faction and corp standing.
Bear in mind that the minimum broker fee you pay will still be 100ISK, no matter how good your standing or skills.

Once you start selling very high-value items consider selling them on a per-order basis over escrow to avoid taxes. Escrow fees are 850 isk with no skills trained, so for big ticket items like freighters, lots of best-named loot, and t2 ships it's the best route to take for maximum profitability.
