Hello. I am a certified newb, and don't really understand probes. I am doing a lot of mining right now, and I'm wondering if mining probes would add anything to me just using my mining lasers to get ore.

tech 1 mining drone has a capacity for 15m¦ of ore, and it increases by 5% per mining drones skill, and by 20% per drone interfacing skill. It takes drone around 1 minute to mine its full load ant then some time to return to your ship. however, if your skills are high enough they can mine noticeable ammounts of ore, especially tech2 ones.

OK, that helps a bit. But does it expand my cargo hold at all? Can I hold a full drone and my normal cargo? Or does it empty its cargo into my hold?

Every time the drone returns to the ship it empties its cargo hold into yours. Your cargo hold doesn't get any bigger through using them. You can get Expanded Cargo Hold modules which increase the size of yours. As far as I am aware the drones stop mining and giving you their ore when you are full.
The Drones themselves live in your Drone bay. Put them in there instead of the cargo hold if you want to use them.

One important thing to note is that drones is not equal to probes.
Drones are little robots that go in a ships drone bay, operate based on skills under the "drones" heading, and can do combat, mining, electronic warfare or repairs.
Probes are shot out of an appropriate launcher and are used for moon scanning, system scanning (to find hidden pilots or objects) and warp disrupting.
Just a terminology note to avoid confusion in the future. Good luck!
