Could someone please explain to me what the difference between the Procurement and Visibility skills is? And how exactly do you use them? I'm sure they would make my freighting much more profitable if I understood them.

Procurement lets you place non-immediate buy order in distant station. Without visibility this order will have only Station radius, but Visibility V it can be up to Region.
Example: you are in station A and want to place buy order in station B 10 jumps away with 3 jumps from station B radius. You need Procurement to remotely setup the order in station B and Visibility to make it with 3 jumps radius.

Worth noting that it's a very rare situation that would ever require Visibility V.

Very rare, as in never? I mean you have to be in the region to set up the order, the only time you'd need to use visibility is if you weren't anywhere near a station and had to do it from space.

Yup, or if you didn't have the skill to modify sell orders at any range and thus needed to place the region-wide buy order in a far-away system for easy maintenance.
