I went from one mission, being to terminate a few pirates. I think 3 pretty weak ships. To a vaguely described mission. I was supposed to capture a transport of marines. No where in the tutorial did it approach capturing another vessel. Also, this transport had 13 ships guarding it. I was pretty much obliterated on spot.
I dont understand how your supposed to tell mission difficulty. Im not sure how I went from 3 easily destroyed ships to 13 decently armed ships. Shrug...

The two quickest ways to guess how hard a mission will be is to look at the reward and time allowed to collect bonus. Generally, the higher the reward the harder the mission. Likewise, the longer you are given to collect the bonus, the harder the mission is expected to be. There are lots of other sites/forums that describe each of the missions in detail, but those tend to focus more on the level 3 and 4 missions.

For L1 missions you'll generally need the T2 gun frigate, or ideally a destroyer. For L2 a cruiser or assault frigate. L3 requires a BC or HAC and L4 a BS either with others backing you up, or fitted with all T2/faction equipment. |

Level 1 missions can be done in tech one frigates, escpecially with the new higher skill startup characters after Revelations.
You CAN NOT do them in your starter ship, nor can you do them (at least most of them) in a ship with mining bonuses or astrometics bonuses instead of combat bonuses, but get a good combat frig and you are ready to go.
T2 frigs are drastic overkill for level ones, and even level 2s; Good pilots can run level 3 missions in T2 frigs. A destroyer is moderate overkill for level 1 missions, but might make them faster, and thus more isk per hour if your trying to raise money. If you have problems with how to outfit your ship feel free to post specific questions here or in the ships and modules forum. Once you have a good setup you might find that most level 1 missions are if anything too easy.

No -- L1 missions are easily done by a good T1 frig setup. I don't know of any mission that requires a T2 ship or setup, all the way up to L4.

As a reply to the topic, definately no. It would take a lot of imersion out of EVE if you knew in advance how tough a mission is going to be. Getting to know them after some time is worse enough in my opinion. Could really be more varied.
As to telling how hard a mission is, you can allways do a quick scouting trip in a shuttle. For missions that have a large number of enemies, hit and run tactics work quite well most of the time. Even in the case you get warped in right in the middle of them, you usually have a couple of second the get moving and cover some distance. Just keep flying at top speed until you notice some enemy ships falling behind.
Of course, you get another option. Just use a ship that is totally overpowered for a given mission and do it semi afk while watching a good movie.

A HAC for a lvl 3 mission? 
Drake anyone? 
Merlin = good enough for lvl 1 missions Caracal = good enough for lvl 2 missions Ferox = good enough for lvl 3 missions and if you want to sleep walk through lvl 3's get a drake 
And yeah, T1 gear is also good enough for missions, no need to invest in T2.

The rewards of the mission should give you a decent idea of the difficulty of said mission. Due to the vast differences in a way a ship can be setup, a mission that is hard for one person in a rifter, can be extremely easy for another person in a different rifter.
