I was wondering how practical/common it was for pilots to use ships which belong to different race. Also, if someone could outline for me the benefits of various races ships (missiles, drones, pvp, good mining/hauling) that would be appreciated.

So because of this, its much better to stick to a single race. You will have skills that complement each other, and help you advanced better. So you should pretty much pick 1 race of ships and stick to it, although the race of your actual character does not matter.
Caldari Ships - Use missiles or Hybrids. Missiles are good for PvE, bad in most cases for PVP. Hybrids are the opposite... they take more time to train, but ultimately will give you a better PVP result. You pretty much always shield tank.
Galentte Ships - Use Hybrids and drones. Hybrids are better for longer range pvp, drones work in certain pvp situations, or in PVE. Usually armor tank. The gallentte line of haulers hold the most STUFF, so in that way they are the best.
Amarr - Lasers of different types and armor tank. Lasers are nice because they don't use ammo, but kind of bad because they tend to do EM and you can't change up the damage type as much.
Mini use AC's and can shield or armor tank.. they are confusing to my poor caldari brain so I don't worry about them too much P
P.S. The best mining ships are ORE SYNDICATE which are not race specific.. so no worry there. For a newb miner, the caldari's Osprey is my favorite miner.

This is incredibly common. I've got a Gallente character and I use Caldari ships as well as Gallente and Minmatar ones. The problem with switching races is that you oftentimes lose out on the bonuses that ship provides. For example, I could easily fly a Minmatar frigate but I'd need to train projectile skills to take advantage of its bonuses and my gunnery skills are focused mainly on hyrbids. That makes crossing between Caldari and Gallente very common. As for practicality, I would recommend at least a bit of variety in what you can fly because you just never know what you'll find floating near suns...
The benefits of missiles are that they have huge range. If you pair a fast ship with missiles (and can avoid webifiers) you can generally outrange anything. This makes Caldari ships especially popular amongst PvP and PvE circles. Drones are badically missiles that keep on giving. With good drone skills you can send them out at good ranges and have them help break the tank of whatever you're fighting. It also adds a level of saftey to you because as long as they're shooting at your drone, they're not shooting at you. If by benefits you mean what to use with who, go hybrid/drones with Gallente; Projectile/missile with Minmatar; hybrid/missile with Caldari and energy with Amarr. Amarr ships are fantastic armour tankers and work really well in basically any gang.
For hauling, go with either the Gallente or Minmatar. With Gallente industrial 3 and the Mk. 3 you'll be better than most Amarr haulers. With level 4 and the Mk.4 you'll outhaul Caldari haulers and with level 5 and the Mk.5 you'll outhaul the Minmatar. But that's fairly skill intensive so you might be better off going with Minmatar haulers and a Mammoth.
Either way, fly safe.

You mentioned earlier that all races have some ability at long and short range and Gallente at short range can be downright brutal. A Blasterrax or Blasterthron are tops or very near tops in their respective classes for outright damage output (note this is a close range, VERY close range, setup).
Crosstraining happens a lot but more with older players as something gets nerfed and something else becomes the ship of choice. CCP does a great job at balance but with a game this complex there is always something that is favored. As a result many people crosstrain to leave a set of ships that lost their luster and go for the new whatever. For instance, Amarr used to be overpowered and everyone seemed to fly them, then they got nerfed to hell and now are likely the least favored.
I'd wager Caldari are most favored at the moment. People just love their missiles. Add in loads of mid slots for EW and they are current favorites.

A lot of players end up cross training, but generally it is better to atleast start your career - especially if you are going the pvp route - to spec in one races ships untill you get all your fittings, drones, cap management, and tanking skills up to a reasonable/high level of training.

Yes, it is best to focus on flying one race's ships first so that you get to all the cool t2 versions of those ships in shortest amount of time. Then you should definitely cross-train for antoher race. Three reasons to do this. One is that you might find you like those other ships better actually. Second is that ships of different races are good for some different things you might want to accomplish in game. Depending on what you would like to do at the moment, you will be able to hop into a ship different from your primary race, a ship that will perform better. Third is that by flying different ships you get to understand their strengths and weaknesses, see their seups for yourself, which might help you later in pvp.
And there are not that many race-specific skills and much more many skills that would apply to any ship you fly.

I've spent all three and a half years specializing in Gallente and Caldari ships; I can now fly any Gallente ship except the freighter and command ships (booo battlecruiser 5). I can fly almost as many of the Caldari ones (no capital ships for caldari). I know plenty of people who cross-train to other races, since your starting race means absolutely nothing.
Your character's "race" is just a nice backstory, and doesn't have to have any impact on what you fly. _______________________________________________
