OK, so missile mechanic knowledge is one of my weaknesses in game.
Even with my lack of knowledge and ~meh skills in missiles the Rattler is so strong at anti-POS work that my failfit was getting almost 1700 DPS with normal launchers and over 1800 (at less than half the EHP) with Polarized.
For highsec use (dreadnoughts not an option) against POSes with light defenses, how would you fit? More EHP is better assuming it can be managed at minimal cost. If player defenders show up, those that can escape would reship into light tackle (perhaps Worms) and/or logi, so being able to defend against frigates isn't important.

I probably wouldn't go the Polarized route. 4x BCUs, DCU and 3x large core defense field extenders plus whatever you want in the mids will easily give you in excess of 200k EHP.
I am currently away, traveling through time and will be returning last week.

My approach last night was to do the first 20 minutes with normal T2 torpedo launchers, then once noone had showed up, warp off and refit in a station to polarized (you can't refit at a mobile depot because control towers have a 40km exclusion zone on deployables). This worked fine and I'd probably do it again.
Obviously Polarized weapons are a huge liability if you get actively resisted.

The EHP only matters if it can shoot at you. I solo killed a medium tower in a matter of hours with a gank polarized fit. If you expect resistance, you might just go T2 launchers. Take down the defenses with a tank rattler, then come back at the tower in full polarized rage gank mode. Keep your drone mods on if you can, so you can deal with surprises. But otherwise, sentries are more than adequate for supplementing the torps.

If there's automated defenses, I'll bring in a Kronos to clear those. The Kronos can tank 3000 DPS forever, or ~6000 DPS until cap booster charges run out, or 7000+ with an AAR fit.
I'm more considering EHP on the Rattlesnakes from a perspective of buying time if player defenders show up - you want long enough that even if they manage to land interceptor tackle on some of your fleet that you can have the non-tackled fleet members warp off and reship to ships capable of anti-frigate work, and/or logistics cruisers. If your EHP are terrible, your anti-frigate ships might take long enough to land on grid that you lose a rattler or two.
That said I'm willing to take the odd loss if the time saved is sufficient.

You could use a neutral fleeted Orca to carry ammo/refit on the fly.
