I'm running a dual monitor setup, 2x 19" flatscreens both running at their native resolution of 1280x1024 and i'd like to run eve at 2560x1024 to maximize my viewing range. I've seen screenshots of people running eve on two or even three monitors spread, but i can't seem to find out how they did it. Anyone know how they did it?

You can't run 1 client on multiple monitors, unless you have a multi-head GFX card that will allow you to render a single desktop across multiple screens (not common).
If you want to semi-fullscreen multiple clients on your monitors, give EVE launcher a shot.

Well i can run a 'spread desktop', not sure on the dual-head thing i've been out of the hardware scene for awhile. I'll have a look at that piece of software, it looks very nice.

You can indeed run on multiple heads but it is a bit "borked".
Just run the game in horizontal span mode (for nvidia cards) and you should be able to set 2560x1024 as your resulution. If not, go to your eve folder and then into the cache subfolder where a file called prefs.ini should be. Open it with notepad and add the line advancedDevice=1 to it and launch eve again.
If you play in windowed mode, i can recommend EveMon (http://evemon.battleclinic.com/) or EveLauncher (http://eve.grismar.net/evelauncher/) which get you rid of those nasty window borders.
