anyone care to enlighten me on the setup that allows a hawk to sentry tank indefinatley? cheers.

Well.. only way is to have another ship shield boosting you, else you will die really fast

Pretty much hopeless without a shield booster friend...or some fancy jovian mods on that little bugger.

To sentry guns suffer from tracking issues? Can I hurtle around one in a Raptor at 3km/s at a 1000m orbit and feel reasonably safe? Excluding the other one of course.

Sentrysguns have the tracking of jovian shuttle sized guns.
(that means they will pop your raptor in 2 volleys or faster no matter if you go 24.000m/s)

Hawk is the best frig to use when tanking sentries. Yes it does require a friend or two Shield boosting you. Using a frig lets target lock smaller ships before they warp out.

Yeah, you should use a Hawk to sentry tank, because then you can lock stuff really quickly - because it's a frig.
