All right. After about a week of poking around Eve and trying out different races/skill sets I've come to the conclusion that I sort of prefer Minmatar statwise, and Gallente shipwise.
I know many people train up the ships of other races. My question is, are there drawbacks to doing this (other than the extra training time needed). Do you still get the inherent ship bonuses associated per level of training?

Yes, you get the bonuses. The only drawback I can think of is you might have to travel to the Jita hub or to Gallente space for the absolutely bestest price for Gallente ships... Not sure how the prices in the Minmatar areas compare, though they probably won't differ by more than 10 - 15%.

Ive only been playing a month or two and have found that the weapon systems take most of the training time - as a Gallante and having waited for an age for decent rail and drone skills, to be any good with missiles or energy weapons only really helps dilute my ability to fight back as a Gallante in the short term.... if you know what I mean EveMON is very useful to plan these things better, I've found it invaluable.

also, if you stick with two races that share skills it will happen much faster. for instance, both amarr and gallente are armour tankers, both gal and caldari use hybrid weapons. think of these things if you don't want to have to start a whole new branch of the training tree.

Another benefit to cross-training is being able to get into faction ships. Of course, you will want to be a bit on the wealthy side, with a decent pair of balls to go with it.  Why there should be a breathalyzer to login to Eve:

The general advice that I have heard, is that it is best to train for one race at first and not spread your training thin over two or three races. You'll have to stick to that race I would say at least half a year, depending on how in depth you will want to train for it. Then, it would easier to cross-train for a race that uses same tanking strategies and same weapon types.
At first glance it appears that there are not that many race specific skills. Once you pull out EVEMon and consider it in more detail, it becomes immediately apparent what a big headache cross-training for another race is. Frigate, cruiser, and battleship skills are the race specific skills that you will initially want. Industrial, carrier, and deadnought are also race-specific but those are something that you would probably not care to cross-train. The small, medium, and large turret skills as well as specialization in those are also required for cross-training. Some Gallente ships use missiles so you will have to train missile skills in the long run. Another set of skills that is race specific is the electronic warfare skill set. But you might as well ignore these skills if you do not plan to fly e-war ships.

no drawback at all. if you roll a minmatar, just take a carrerpath that gives you skills that help with gallente as well.

If you intend to only fly Gallente ships you won't have much problems, but if you plan to use Gallente ships for PvE and Minmatar ships for PvP, you may do better cross training Caldari. At least the Caldari's primary weapon, missiles is also the Minmatar's secondary weapon, and shield tanking will benefit your Min ships better than armor tanking. The Gallente have far less in common with Minmatar (armor tank vs shield tank, hybrid weapons vs projectiles, drones vs missiles). They even mine drone based instead of beam based!
As said, it's the training of the skills to make the most of the ship's strengths(guns, secondary weapons, EW, tank) that takes the most time. The ships themselves are fairly easy to learn. The smaller the overlap in those support skills, the harder it is to effectively sustain training in more than one race's ships.
