Was thinking of getting into a bit of rig building...just the odd one now and again to get some funds up together. But, given the time involved in collecting materials, I don't want to end up building something that won't sell. So, which ones are worth building for sale on the open market?

pends on what salvage you have - shield rigs are very popular but arent selling for very much these days, cap rigs require more parts and tend to sell for a better markup

As a high-sec miner who enjoys (yes, it's true) mining afk when RL takes precendence, cargohold optimisation rigs are really nice!

grid rigs (ancillary current routers). they sell like hotcakes.

Everyone so far is making good points. I would suggest taking a close look at the rigs on sale currently. Are they selling? It is important that you pick a rig you can actually turn over.
Some rigs are essentially worthless since they suffer from stacking penalties. Another reason to stick to the ones actually being purchased.
Pick an area you have easily accessible parts for. If you are running missions this may be different, but for me out in 0.0 Caldari space my choices are shields and missiles.
My favorites -selling to corpmates- are shield rigs giving 15% shield or 20% shield recharge. These are not chosen for profit, however, so they may not be the best to sell. I picked them for functionality.

the guy above me makes a good point - the rigs that tend to sell for a higher value are those using burned and s...(doh cant remember the name (refer to sig)) the ones of lower value use charred and fried

I think your best bet is to have a look at what's selling on your market. Browse the market in your region, click on the various rigs, and look at the price history tab.
Personally I've found that given the price of most components in my region (100K isk), and the fact that most rigs require about 300 components, you're looking at around 30-35 mill per build. Even with a small mark up, not many people want to spend near 40 mill on a single fitment item.
As there aren't many missile rig parts in my region, I've been travelling and building missile rigs. Even given the amount of lvl 4 mission runners in ravens in my area, I'm struggling to sell them. Even tried selling at base cost.
So, I guess what I'm trying to say in answer to your question is NONE of them until the component drop rate goes up and thus the base price comes down.

Personally I use 1 shield rig on my ratting ship. I have ZERO interest in paying that kind of isk for PVP purposes.
Does anyone have some useful rigs that do NOT use Burned circuits???
