I think locking and targetting got covered pretty well in the responses you got already, heh. The other side of your questions, how they killed you so fast, has to do with weapons and damage, basically.
You may see big numbers on that industrial's shields and armor, compared to frigates, but when it comes to battleship-sized weapons, they aren't that big. One volley from one ship would probably take your industrial out, and I bet they had multiple ships sitting there.
It's the way of the gate camp, even big ships don't have a chance. 10 vs. 1 aren't good odds. That's why all the suggestions are about how to avoid or try to escape, rather than fight back.
In 0.5 and above, where Concord responds, a fight often becomes an issue not of surviving, but of surviving for just a few seconds, long enough for Concord to get there and blow the attackers up. A few thousand shields on a ship might allow you to not be taken out on the first volley, meaning you could possibly survive if Concord gets there fast.
In 0.4 to 0.1, Concord doesn't respond, but gate sentries do shoot attackers. However, the damage is relatively small, one of their battleships can probably take it for a couple minutes before it has to warp off, or it can probably take it indefinitely if it's set up for it (and they probably have a few set up for it). So you can't really try to survive "a few seconds" there; it's a matter of surviving until friends arive, and they better get there fast. Mostly, you have no chance, actually, too many of them and / or they take you by surprise.
Finally, in 0.0, there's no response, so you're on your own.
Finally, how did they know you were a hauler? They know the ship and its capabilities; they actually know most ships. If you were in WoW and you saw a gnome, you'd know what classes they can possibly be, and then just the way they look and/or possibly the first spell would reveal their class. You would then know exactly how to attack them, whether you're a hunter or a rogue or a mage... you'd have the PvP experience to know. The same kind of knowledge is present in EVE, when it comes to ships and what they can do.
Or it's possible that they didn't care, no solo ship would have had a chance, really (and they knew you were solo from Local). So they just locked whatever it was and shot it. You could have been a battleship, same thing. They wouldn't really stop to think about it, they'd just lock and shoot, so that you can't escape, so that you don't have enough time to line up.
