This is kinda a post for the more trading orientated areas of the forums, but then again I'm more looking for info on how Covert Ops ships work....
Could it be viable to move high-value items in and out of 0.0 using a Covert Ops ship to avoid camps and roving pirates? I realise the cargohold is very small, but Im looking for something a wee bit more exciting mainly, so this wouldnt really be a problem.
So yeh, basically... how unstoppable are Covert Ops ships? could I bypass gate camps and whatnot with them?

Well avoiding gatecamps is not really a problem since you jump into systems cloaked anyway. The real difficult thing is to undock from camped stations since you cannot cloak right away.

How about bubbles? how do they affect Covert Ops ships?
(as you may have guessed, I have had no experience with any of this :P)

Bubbles don't effect covert ops. Well they prohibit warping. But you can cloak and just fly out of the bubble. You just gotta make sure noone gets close to you so that you do not uncloak. ;)

With some training you will learn to cloak right after jumping. Thus you are on no overview at any time. Also evasive maneuvering 5 helps a lot to align and warp before locked if you were uncloaked.
For bubble camps it is a good camper practice to deploy some containers around the camp at common warp in points (from gates and/or stations in 0.0). Smart cov ops pilots warp to planets or belts and then head for the gate. Therby entering possible bubbles at a different warp in point, where there are no containers for uncloaking.

If you have situational awareness, you'll never die short of a bout of extreme bad luck (some guy sitting within 1.5k of your uncloak spot after the jumpin and just not moving away). The only way I've ever lost cloaking ships is pretty much uncloaking at the wrong time, both times by the age old user error method of me hitting the button twice.
Basicly, break jumpcloak, hit hotkey for MWD + cloak and you win. Yaaaaay.

Also, you are always on overview (or the very least on a scanner refresh) for a second - but completely unlockable. ;)
