Alright so I've been looking to build myself(corp) moreso to be run by myself.
I've already found myself a nice moon. No other pos is in the system and proper npc station equipment in the system. My corp/alliance doesn't have any enemies out in that area.
Basically there's a simple reaction and a pretty good metal that can be mined. The metal itself will pay off the costs easily no doubt. However I'd like to also moonmine the simple reaction. That's beyond the point really.
I was looking at a small tower. However the tower only has around 1600 cpu. So a reactor in of itself seemingly takes up 1500cpu at least according to item database. Basically... you can't even moonmine with a small tower and use a reactor. Which as far as I'm reading it's not valuable to just mine the materials and sell as is. Unless it's a metal.
So then I went to a medium tower which is starting to get to the outerlimits of my ice mining abilities. Still I wouldn't be able to have the reactor nor coupling array(s)
Am I missing something? is it still profitable to mine the materials and sell as is? Or is there a way to do the reaction in a npc station? or should I be limiting myself to just mining the metal? even then.. would that be profitable?

its the medium reactor which uses 1500cpu and the other reactor for advanced reactions uses 3000cpu.

The minimum you need is a Moon harvesting array (500cpu), a Silo for the second component (500cpu), a medium reactor (1500cpu) and a Silo for the output (500cpu). Together 3000cpu. A Gallente Tower Medium has 3375 cpu so you still have 375 cpu over for other things (corp hangar, coupling arrays etc.). For defence there are lot of POS weaponry which don¦t use cpu.
The maintenance costs for fuel per month will be about 60 millions isks. Plus you have first to invest 300 millions into the tower and equipment. If you make a profit depends from the value of your produced material you have to calculate for yourself. Depends from the buy orders on the market - if there is demand for the material or not for a price making the production profitable.
Regarding the question if moonmining itself is profitable: The medium tower needs about 60 million isk/month fuel. That means about 90.000 per hour. Assuming you mine the moon with 3 harvesting arrays giving you 300 moon minerals per hour those minerals must have an average value of about 300 isk/piece. If the value is below you will loose money with the POS. Even for metals like Titanium you can expect realistic sell prices of about 70-100 isks at the market. So it¦s not likely you will make a profit with a POS just by mining moon minerals until you find a moon with very rare minerals - probably in 0.0 space but not in Empire or lowsec as all good moons there probably are already "in use".
Reactions at stations are not possible. Also not in a POS located in High Sec.

well so im in amarr space and so it'll be amarr ice. So an amarr medium tower basically isn't enough--To do proper moonmining.

If you are moon mining surely you are in low sec so faction standing isnt required so you could use any faction tower that best suits what you need?

The reason he uses an Amarr tower in Amarr space has nothing to do with hi or low sec location of the tower. It is because he can mine the ice locally instead of needing to import it.
So it is really a question of cost. If a medium Amarr tower won't cut it, but a medium Gallente tower will, you should compare the local cost of Gallente Ice Products with the local cost of Amarr Ice Products, and figure out which is cheaper, an Amarr Large Tower or a Gallente Medium Tower. Don't forget that ice you mine yourself is not free. You can still sell Amarr Ice and use that money to by the Gallente Ice that you needed.
