Carbonara.
Ingredients: As much spaghetti as you will eat 100g pancetta white wine parmesan cheese 4 eggs parsley to taste
simmer the pancetta in the white wine until you boil it all off, and start cooking the spaghetti. whilst it's all cooking beat the eggs and mix them with the (grated) parmesan cheese in a saucepan whilst heating it. BE CAREFUL NOT TO LET IT GET TOO HOT or it'll go all solid and horrible. Once all the wine has evaporated from the pancetta, add it to the cheese sauce and drain the spaghetti. mix the spaghetti and sauce together in the same pan you cooked the spaghetti, and serve.
the sauce should only slightly coat the pasta, not drench it. Like a thin layer.
dead easy to make and tasty as hell. add parsley to taste.
sorry it's very vague but i can't be bothered writing the measurements down.

My dinner 
Carbonara goes well with a bit of shredded bacon and sundried tomato or smoked salmon but way to fatty a meal imo especially @ nightime when ur metabolism is slowing down

Or how about a grilled salmon steak with a side of asparagus & brocollini, followed by a delicious fuzzy/or not clamburger :P

Fry some chicken with garlic, ginger, or whatever other tasty things are lieing around. Chuck in mushrooms. Fry for a little while. Add in bean sprouts and other veg stuffs. Fry a little while longer. Add soy sauce / fish sauce / Lea & Perrins / whatever. Serve with noodles.

That Carbonara sounds damn delicious. Unfortunately due to the amount of snow and ice and out of control cars between me and the store I think I'm going to be stuck with what I've got on hand. Peanut butter and jelly for tonight I guess...

brown sausages in pan.
make batter (50g plain floor, 50-75ml milk, 1 egg plus a little salt and pepper)
put sausages in preheated tin or small casserole pot. I use a sandwich tin. If sausages have not made enough fat in pan add a little oil to tin (1 dessert spoon).
pour batter over sausages in tin. put in oven at gas mark 7 for 30 minutes.
put on plate. drown in gravy. enjoy.

Chicken livers with port & sour cream sauce and tsar mash.
Peel & dice (2-3cm chunks) about 500g potatoes. Put in pan of boiling water, cook gently for 10-15 minutes, until soft but not mushy.
Meanwhile fry 4 slices of streaky bacon for 1 minute. Add 200g of fresh, trimmed chicken livers. Fry for 2 minutes on high heat and then season to taste (freshly ground black pepper is nice). The livers should be cooked on the outside but still pink in the middle.
Remove liver & bacon from the pan, put into an oven-proof dish and place in a warm (150oC) oven to keep warm.
Put 1 tablespoon (15ml) of red wine vinegar and 2 tablespoons (30ml) of port into the frying pan, boil vigourously for 1 minute. Add ~100ml soured cream, reduce heat and cook gently, stirring all the time for 2-3 minutes.
Mash the potatoes, add ~100ml soured cream and 1/4 teaspoon (2-3ml) of dijon mustard, mix well.
Serve the mash onto warmed plates, put the chicken livers & bacon on top, pour over the port sauce, garnish with snipped fresh chives.
Very, very nice with a glass of red wine and some steamed green veg of some kind - broccoli, beans, whatever.
