Hello, I've seen screenshots which appear to have anti-aliasing.. yet I do not have it in my game?
I've searched my graphics settings in-game to find nothing. My card is a GeForce 7600GT 256mb, I'm pretty sure I should have it ;P

Add the following line to your prefs.ini file (located under \EVE\cache folder):
advancedDevice=1
There you go. When you hit ESC there's more settings you can tweak.

Alternatively, you could enable AA/AS through your video card drivers.

While this may work, it's usually not a good idea if you ::gasp:: play any games other than Eve, as some games don't like it when the drivers force a setting. Additionally, since Eve is fairly old graphically, your video card might be able to handle 4x/8x in Eve but when playing Battlefield 2 you might get 2fps with those settings. Editing the ini file is much easier and fool-proof.

So are there any other little graphical tweaks (or general tweaks) that we can do to make things fancier looking? Once would think they would enable all detailed configuration settings for those with the rig to support it.

I believe that the advanced graphical features are unsupported by CCP and are used at your own risk. That's why you have to tweak an ini file to get access to those options.
The best thing you can do is get a bigger monitor and run in a higher resolution. I have a 24" widescreen monitor at home and I run at 1920x1200, which is great because I can have a ton of windows open and still have most of the screen open. When I play on my 1280x1024 laptop it's rough because one of my normal windows takes up almost the entire screen.
