A friend of mine is rather reluctant to play EvE really because there doesnt seem to be any guide or some sort that she can use as a desk refrence and to jolt down notes and what not. Anyway I am wondering if there is actually a guide that she could purchase or some sort of text file she could download and print out or something. Anything would help, thanks.

I can't think of a single 'all encompasing' player guide: eve is big, really BIG in that respect - there are a number of 'mini-guides' on the forums here she could print off. The new player 'intro' is pretty good however and will teach her the basics.
Also the new player help channel is excellent, and of course she could post questions here. In fact these forums really are the 'instruction' manual for EVE.

The tutorial is the single greatest guide that exists for this game. It teaches all the very basic stuff and gives every newbie who uses it a huge leg up. It is the single most underappreciated facet of this game.
Once out of the tutorial, Rookie Help channel is great for new players, as there are volunteer game guides (ISD) to help out new players with any questions they might have. That's available for 30 days.
After those 30 days, the Help channel is the next best place. Largely, the Help channel is player helping player, and can be a bit hostile at times, but if you ignore the trolls you can get some really, really good info there. I would have never made it in this game were it not for the Help channel.
Beyond that, the forums, as stated, are awesome for guides and how-to posts.

For people like me exploring the game and finding out things for myself was part of the attraction of EVE.
As has been said, the tutorial is a great introduction to the game - even better now than when I started!
The biggest source of information about EVE for me has come from other players in-game. The biggest advantage of joining a good player corp isn't access to in-game items but access to tips and advice from the other members.
Even the npc corps contain veteran carebears like me who are more than happy to answer questions.
EVE is very much a sandbox game and there seems to be a steady stream of players through the npc corp I'm in who find it hard to deal with a game with no set goals. Personally I love the ability to set my own goals - however bizarre they sometimes seem to others Can one person build a freighter from bpc's, mining all the ore solo and building the components themselves being one of the more recent ones. The answer turns out to be "Yes!"
Just some thoughts.

Something that I started doing years ago while playing games was to keep a nice notebook on my desk while playing. I write down notes and do calculations in it and you can go back and look at some of your old info and reminisce on old adventures...lol
Like it was said earlier, there is no single guide that covers everything. Good luck and try not to push her too hard to play Eve if she really doesn't want to. It doesn't appeal to everyone.

The main problem with writing a guide for EVE is that you would probably have to update it very very very often. The nature of EVE means that things change all the time. Players discover new ways to use items, ship stats are changed, something starts working differently to before.
As you can imagine, this means it would take a great deal of effort to write a "guide" for EVE. The best thing you could do is find some of the player written guides and have them all linked or stored in the same place, and look over them when you need to. Beyond that, all you can really do is ask someone else. I have had various characters in NPC corps for a long time now, and always find that the newbie corp chat can be helpful, or the various help chat channels. Indeed, these forums are often a very good place for information.
So unfortunately, your friend is going to be a little disappointed if they decide they really need that guide. However, with a little extra effort and a willingness to ask someone every now and again, I'm sure she'll get on fine. Of course, also remind her to ignore the trolls. There are bound to be some around.

As an example, this:
