So I need some clarification here. Freighters can now interface with General Freight Containers in space. Can Freighters deploy these General Freight Containers? It makes me think that mining ops will be a lot simpler now that one freighter can just sit, deploy a freight container and pick it up after alls said and done.

Freighters when destroyed will drop a wreck which other freighters can loot.
Freighters are able to loot from general freight containers too (but a freighter transporting a general freight container will only have it pop up inside the wreck, it cannot be put into space).
Freighters do not have a jettison "tube" so are not able to launch jet cans or anything else.
So all a freighter can do is loot other freighters, stock up a POS or loot general freight containers which probably wont be found in space anyway, so no they wont make mining any easyer.

If you want to use a freighter to haul for a mining op, here's how you have to do it:
Take freighter to belt. Blow it up. Mine into the wreck. Haul ore back to station with second freighter.
Easy as pie.

dock, put the ore into the freighter, go to belt, blow it up, loot the ore from the freighter, dock, refine.

Actually the idea has substance. CCP could give us some improvements in mining because the current cargo can that we jettison in space can hold up to 27.5k m3.

CCP doesnt need to make mining easier anyhow  Minings already an easy way to make pathetic amounts of isk (barring 0.0 mining), making it easier will mean its even less profitable. I remember when i use to mine, i'd just sit there, play something else on my laptop and turn around to move ore from my barge every few minutes. I think miners would appreciate some more difficulty in mining ops and make it more profitable that way.
