 1. I tried to created an insta-undock bookmark of Jita 4-4 by following the numbers. That BM worked pretty well, until my eleventh test in a max-align time battleship (can't fly an orca or a freighter), when my ship spent several seconds to enter warp. So it's not a perfect insta-undock bookmark. Any suggestion about how to get a perfect insta-undock bookmark of Jita 4-4?
 2. How to create a perfect off-grid insta-undock bookmark of a vertical station? There is only a white line from the station pointiing to my ship when I'm 10+ kkm from it, and obviously it can't serve as a guidance.

 1. There is a moon in Jita you can use to get some very good insta-undocks bookmarks. Turn on the special brackets (look in the esc. menu shortcuts for it.), then warp to the moon directly in front of the station undock and drop a few bookmarks midwarp.
 
 2.Just undock in a fast frigate with a mwd fitted and turn it on, do not change direction. Due to the slight variance of exit angle when undocking you may need to delete and try again when you test them.

 This. When you undock, you don't always undock in the same direction. There's a small random angular variation. With big fat ships, a wrong angle can turn a regular undock bookmark into a few seconds of alignement.
 
 Unfortunatly, i don't know of a way to have a bookmark that works everytime.

 It sounds like you already understand that you have to manually pilot to get a good undock bookmark. It's simply one of those things that takes a little practice to perfect.
 
 One of the things you can try is to drop multiple bookmarks at various distances as you fly out. I don't know what distance you're using, but the farther out it's set, the more sensitive to alignment it is. That way, if your farthest BM isn't working, then your closer ones might. Obviously the farther out it is the better, but a 200km bookmark that works is better than a 20,000km one that doesn't.

 I'm pretty sure if you open the combat overlay one of the directions lines up with the station undock so you can just align that way

 "Best" way to get guarranteed good bookmarks is to undock in fast frigate like 10-20 times, fly something like 100-200k out and drop cargocan. After you do this you can see a "ring" of cans and you just aim to middle of them. Bit slow but almost guarranteed to work.

 I was lucky and only had to do this twice, I had one directly above the center point and another directly to the side by the same amount, made the BM at a firtual vertical and horizontal intersection of the two and has been a perfect BM ever since.
