I guess I should have asked this a long time ago but never got around to it. What does one do with the logs that sometimes drop from NPC pirates? I tried a search of the forums but the only posts date back to 2004.

You recycle them. You can read them, but they're useless.

GC is right, but for a slightly more indepth answer:
They were introduced like u say around 2004 and were directions to a gathering of NPCs at a planet or moon. They were put in to spice up NPC hunting and the like. Ranging from easy NPCs in high sec, to hoards of harder NPC in 0.0 systems
They were the forerunner to the complexes we have today.
Like was said they are no longer used and can be refined, i believe they yield Nocxium.

I'm not really sure that they are completely useless, today I read a pirate log, and there was info about some kind of strange mineral that only grew in one particular place (I don't remember where), and could have big influence on the market, I'll check that out later, that's for sure :)

Don't bother - the info is not current and you won't find what was supposedly there.
