Iterons are great for hauling, not mining.
Start training as hard as you can for Retriever, then Covetor, finally Hulk. Stay out of 0.8 and below unless you train drones as well for a defensive capability against rats.
The Iteron is good, the best as a hauler, but only if you take the considerable time to work your way up to the Iteron V.
If you're thinking of AFK mining in high sec, a good all rounder with good capacity that you can get without too much SP training would be either the Bestower (5 low slots for cargo expanders) or the Badger Mk II (6 mid slots - a very flexible vessel.)

The Iteron has virtually no defense and not much mining capability.
I'd go with a Cruiser - I used a Vexor with 2 x miner II for a while and mined into Giant Secure Cans anchored in space. Then I got Iteron out to collect ore from the GSC. The Vexor can hold it's own in High-sec.
I've since moved on to a Retriever as it mines very well with strip miners and has a nice drone bay for 5 hobgoblins to kill any rats in 0.5 and above. I even had some success with mining Jaspet in 0.3 killing quite a few 0.3 rats with the hobgoblins. It was OK until I got complacent and podded by a player pirate at a gate camp.
I've joined a new corp and I'm looking forward to taking the Retriever out in 0.0 (with some top-cover this time though).
Forget using haulers to mine though - it's way too slow.

Um, you need a gun turret to equip mining lasers, itty's don't have gun turrets.
Mining barges don't have turret mounts but they also say in ships desc that they can equip them.

Iterons have one gun turret, at least my Iteron 3 does. You can still use it for afk mining in 0.9 or 1.0 without much worry. It's painfully slow but if you're afk, you won't really care.

They do, but only one turret. Cruisers like the vexor on the other hand have 4 turrets (IIRC) so can mine 4 times as much and are much easier to train for than a retriever.
It all depends on how much you want to mine. The retriever takes much longer to train for than a vexor, but can mine much more. If you're just looking to mine some veld to top up your isk balance once in a while, I'd say you should probably go with the vexor for now.

The little Navitas frigate with 2 mining lasers can mine just as much as a Cruiser with 4 lasers, if your Gallente Frigate skill is at level 5. Look for ships with a bonus to mining yield. They'll get you by until you can get into a barge. The Vexor can fit 4 Miner II's (with CPU Co-Processor modules). It can also fit a full complement of mining drones AND combat drones. It's mining bonus is in it's drones, so with a high cruiser level and good drone skills (who doesn't want good drone skills, anyway? Only defense you'll have in a Retriever...) it does darn well.

Can I fit a Miner II to an Imicus? I can see no reasn why not. I am training to lvl4 mining at the moment, I would hate to waste my time.

Yes, you can, but you might try the Navitas instead. It has a bonus to mining laser output, which the Imicus does not.

simple example I use on folks in CAS and other new corps:
mining in an industrial (like an iteron) is loading a dump-truck with a shovel. it will take a long time.
hauling with a mining ship (like a Navitas or a Vex') is using an Earthmover to transport dirt across town a bucket-load at a time. it will take many trips.
one must use ships Together, or even better get several people in different ships working together, for the greatest effect and highest reward.
