I have been trying to figure out what I could stack onto one for NPC rat hunting and the like but it seems the 7 turret slots are wasted unless you want to use cruiser size guns. Any ideas?

4 dual heavies, 2 tachyons, 1 whatever u have room left for
med slots are some hardeners and a booster for shield (hardeners fro what your gonna be fighting)
low- powergrid mods to fit the guns, an armor repairer for just in case and some other stuff u want
ship is one of the best u can use for NPC smashing, no ammo and very strong...experiment to find the best setup

Reactor control units, 7x 1400 mm Artillery. Sensor boosters. Gate ganker setup works nicely on NPCs too.

I got four tachs, one dual heavy and 2 720mm howitizers. Works fine to me. But before that I was experimenting with various setups, and without using cruiser guns, I could fit 1 tachs, 2 megabeams, 1 megapulse, 1 dual heavy pulse and 1 dual heavy beam. But then the setup was designed to test the guns per se.
If you want seven premium guns, try 7 1400s, using as much power diagnostics as you can. With 8 low slots you can achieve this, and perhaps a spare slot for a weapons mod like a counterbalance stabilizer. Maybe with relays too. Your shields, cap size and cap recharge rate will go up as well. On the midslots, a sensor booster will be nice.
With 7 1400s, it's possible to gank a cruiser sized target (30 to 35k NPC) with a single volley if you're lucky, and a very good chance that said target will die in the second volley.
Better yet, try an Apoc then and see if you can fit 8 1400s.

Dual Heavy Beams all across the board. 3-4 damage mods, cap relays in the other slots with odd co-processor thrown in if you are missing skills. Usual shielding stuff in the mid slots (will be limited to large booster, not enough cpu)
Might want to swap some stuff around to throw in a smartbomb for anti-missile cover...

I use 4 tachs
also maybe 5 megabeams
7 x 1400mm would be good, but unless you have REALLY good skills I would not suggest it.

You should try armor tanking some time. Trust me, it works if you know how to use it correctly. Since I fly caldari ships, I don't know too much about it myself, but I know it works.

Dont bother with Tachyons for NPC hunting, use 4 Mega Beams, 2 heavy beams(modulated if possible) and launchers with defenders if enough CPU.
large shield booster, optical tracker and hardener depending on what type of weapon the NPC is using.
2 extruded heatsinks, 5 cap power relays and 1 warp core stabilizer, if needed then toss out the heatsinks and add CPU or Power grid upgrades.
You can run all modules non stop if needed but you only need to activate the Mega Beams if you know what you are doing and the heavy beams are only for backup if the NPC come to close.
Always try to have different crystals in cargo for close range if all fails.

Thanks, I will try some of these ideas out. :) In fact, I think the only ones I will NOT try are the 1400mm ones cause I don't ahve the skills to use them. :)

Need to get them to Medium atleast. Armor Tank with 7 720mm Protos and 1 Med Smart Bomb would work well. 1 XL shield booster, 1 Shield amp and 1 Lif AB
use all them lows for sensor array or 2, dmod and armor mods.

i'm having a hard time deciding on guns. ;[ any more than 4 1400 i need grid modules which are low. At least 1, so that takes out room for dmg mods/1600mm/cap relay 1(yea i'd gues id still want a kinda low recharge).
So i was thinking of Using maybe 1rcu, 4 1400, 2 800mm, 1 smallsmartbom or some crap.
The hull bleed scares me :[
Tanking though I get 7312armor with 1 normal 1600.
